Double-Decker Pizza (or Lasagna) Grilled Cheese
Ingredients
• 3 slices thick artisan bread (Sourdough or Texas Toast works best)
• 2 tbsp butter, softened (or mayonnaise, for grilling)
• 1 ½ cups shredded low-moisture mozzarella cheese (divided)
• ⅓ cup marinara or pizza sauce (warmed)
• A handful of fresh spinach or basil leaves
• 1 tbsp grated Parmesan cheese
• ½ tsp dried oregano or Italian seasoning
• (Optional) Garlic powder to sprinkle on the buttered bread
Instructions
1. Prep the Bread
Heat a large skillet or griddle over medium-low heat. Butter one side of the top and bottom bread slices. For the middle slice, lightly butter both sides. (Pro-tip: Sprinkle a little garlic powder on the buttered sides for extra flavor).
2. Toast the Middle Slice
Place the middle slice of bread in the skillet and toast it for about 1-2 minutes per side until lightly golden. Remove and set aside.
3. Build the First Tier
Place the bottom slice of bread in the skillet, butter-side down. Layer it in this order:
• A generous handful of shredded mozzarella
• A layer of fresh spinach or basil leaves
• A spoonful of warmed marinara sauce
