CHX NACHOS made from scratch 🌮🔥

Had fajitas last night (chicken + 3 bell peppers + red onion, seasoned up) → chopped them down → layered over homemade tortilla chips (makes ALL the difference 🫶🏻).
Loaded with Monterey Jack + Colby Jack, baked till bubbly, then finished with jalapeños en escabeche, crema + cilantro.
