Cookie Monster is the best, plus chocolate chip cookie cake is fantastic 🍪

Ingredients

Cake

1 box vanilla cake mix
1 cup whole milk
½ cup sour cream
½ cup salted butter, melted and slightly cooled
4 large eggs
2 teaspoons vanilla extract
Blue food coloring
1 cup mini chocolate chips
1 tablespoon all-purpose flour

Cookie Dough Buttercream

2 sticks salted butter, softened
3½ cups powdered sugar
½ cup heat-treated all-purpose flour
2 teaspoons vanilla extract
3–5 tablespoons heavy cream
Pinch of salt
¾ cup mini chocolate chips

Decorations

Mini chocolate chip cookies
Mini chocolate chips
Blue sprinkles
Chocolate sprinkles

Instructions

Preheat the oven according to the temperature listed on the cake mix box. Grease a 9x13-inch baking pan.

Beat together the cake mix, milk, sour cream, melted butter, eggs, and vanilla until smooth. Add blue food coloring a little at a time until you reach a bright Cookie Monster blue.

Toss the mini chocolate chips with the flour, then fold them into the batter. Spread the batter evenly in the prepared pan and bake according to the time listed on the cake mix box, or until a toothpick inserted into the center comes out clean. Let the cake cool completely.

To make the cookie dough buttercream, beat the butter until light and fluffy. Gradually beat in the powdered sugar, heat-treated flour, vanilla, and salt. Add the heavy cream a tablespoon at a time until the frosting is smooth and fluffy. Fold in the mini chocolate chips.

Spread the buttercream over the cooled cake. Top with mini chocolate chip cookies, extra mini chocolate chips, and a mix of blue and chocolate sprinkles.

“You Know That’s Right” pineapple cookie sandwiches 🍍🍍

In honor of the 20th anniversary of Psych, my favorite show of all time, I came up with new cookies sandwiches.

I binge watched it again this summer, and it’s still so so good :) Recipe is below.

Pineapple cookies

1 box pineapple cake mix
2 large eggs
1/2 cup vegetable oil

Coco Lopez frosting

8 ounces cream cheese, softened
4 tablespoons butter, softened
2 1/2 cups powdered sugar
3 tablespoons Coco Lopez Cream of Coconut
1/2 teaspoon coconut extract, optional for a stronger coconut flavor

Pineapple center

1 cup crushed pineapple ice cream topping, drained very well

Directions

Preheat the oven to 350°F and line two baking sheets with parchment paper.
In a large bowl, mix the pineapple cake mix, eggs, and vegetable oil until a soft dough forms.
Scoop the dough into 1 1/2-tablespoon portions and place about 2 inches apart on the prepared baking sheets.
Bake for 9–11 minutes, until the edges are set and the centers are still soft. Let the cookies cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
To make the frosting, beat the cream cheese and butter until smooth. Add the powdered sugar, Coco Lopez, and coconut extract, if using. Beat until creamy and fluffy.
Turn half of the cooled cookies upside down. Pipe a thick ring of Coco Lopez frosting around the outside edge of each cookie, leaving the center open.
Spoon 1–2 teaspoons of the well-drained pineapple topping into the center of each frosting ring.
Top with the remaining cookies and gently press until the frosting reaches the edges.
Refrigerate for about 30 minutes before serving so the filling can firm up slightly.

This trifle came from my newest back to school mini cookbook, and we loved it so so much. If you make anything, make homemade “galaxy” brownies. Hard to stop eating :)

Brownie Bites
* 1 box fudge brownie mix, plus ingredients called for on the box
* 10 ounces milk or dark chocolate melting wafers
* ½ cup rainbow candy-coated chocolate chips
Chocolate Pudding
* 2 (3.9-ounce) boxes instant dark chocolate fudge pudding mix
* 2½ cups cold whole milk
* ½ cup heavy cream
* 1 teaspoon vanilla extract
* Pinch of salt
Whipped Topping
* 1 container whipped topping, thawed
For Decorating
* Cosmic Brownies, cut into bite-sized pieces, optional
* Chocolate letters
* Extra rainbow candy-coated chocolate chips

1. Prepare the brownies according to the package directions. Let cool completely, then cut into 1-inch cubes. Freeze for 15–20 minutes to firm them up for dipping.
2. Melt the chocolate wafers according to the package directions. Dip each brownie cube halfway into the melted chocolate, then immediately top with rainbow candy-coated chocolate chips. Place on parchment paper and let the chocolate set.
3. If making the chocolate letters, melt milk chocolate and spoon or pour it into a letter-shaped candy mold. Refrigerate until firm, then carefully remove the letters from the mold.
4. For the pudding, whisk together the pudding mixes, milk, heavy cream, vanilla, and salt for about 2 minutes. Refrigerate for 5 minutes, or until thickened.
5. To assemble the trifle, arrange a layer of dipped brownie bites in the bottom of a trifle dish. Top with half of the chocolate pudding, followed by half of the whipped topping. Repeat the layers.
6. Finish with bite-sized Cosmic Brownies around the border, plenty of rainbow candy-coated chocolate chips, and the chocolate letters.
7. Refrigerate for at least 2 hours before serving.

These tasted just like cinnamon buns drizzled with chocolate…so good. I really like the Oreos themselves too. The cream inside was flavored like icing a little more than the usual cream 😍

3 Dessert Crafts to Keep the Kids Busy (and Happy!) ☀️

These dessert crafts are fun, fast, and not too messy.

1- Microwave store-bought frosting for 15 seconds, drizzle over brownies, then top with whatever you love—sprinkles, crushed cookies, candy bits, you name it.

2- Roll ice cream cookie sandwiches in crushed cereal, mini chicolate chips, sprinkles, or chopped nuts. You can’t go wrong.

3- Make a birthday cake crumble:

½ box Funfetti cake mix

4 tbsp melted butter

¼ cup brown sugar

Mix and bake at 350° for 8–10 minutes. Cool, then crumble over sundaes 🍦🍦
