Vanilla Velvet Cake with Creamy Butter Frosting
Vanilla Velvet Cake (3 Layers)

Ingredients β Cake
3 cups (360 g) cake flour, sifted
2 Β½ tsp baking powder
Β½ tsp baking soda
Β½ tsp salt
1 cup (227 g) unsalted butter, room temperature
2 cups (400 g) granulated sugar
4 large eggs, room temperature
2 tsp pure vanilla extract
1 cup (240 ml) buttermilk, room temperature
Β½ cup (120 ml) heavy cream, room temperature
Ingredients β Creamy Butter Frosting
1 Β½ cups (340 g) unsalted butter, room temperature
6 cups (720 g) powdered sugar, sifted
2 tsp pure vanilla extract
5β6 tbsp heavy cream (or milk), room temperature
Pinch of salt
Instructions β Cake
Prep the pans
Preheat oven to 350Β°F (175Β°C).
Grease three 8-inch round cake pans, line bottoms with parchment, and lightly flour sides.
Mix dry ingredients
In a medium bowl, whisk together cake flour, baking powder, baking soda, and salt. Set aside.
Cream butter & sugar
In a large mixing bowl, beat butter and sugar together on medium-high speed until pale and fluffy (about 3β4 minutes).
Add eggs & vanilla
Beat in eggs, one at a time, scraping bowl as needed. Stir in vanilla extract.
Alternate wet & dry
On low speed, add β
of the flour mixture, then half the buttermilk. Repeat, ending with flour. Mix just until combined.
Stir in the heavy cream until smooth (do not overmix).
Bake
Divide batter evenly among pans, smoothing tops.
Bake for 25β30 minutes, or until a toothpick inserted in the center comes out clean.
Cool completely
Let cakes cool in pans for 10 minutes, then turn out onto wire racks. Peel parchment and cool completely before frosting.
Instructions β Frosting
Beat butter on medium-high until creamy (about 2 minutes).
Gradually add powdered sugar, one cup at a time, beating on low until combined, then on high until fluffy.
Add vanilla, salt, and cream (1 tbsp at a time) until frosting is smooth and spreadable.
Assembly
Level cooled cakes if needed.
Place first cake layer on serving plate or stand. Spread a generous layer of frosting.
Repeat with second layer.
Top with final layer and frost the top and sides smoothly.
Decorate with swirls, sprinkles, or fruit if desired.
