Buttermilk Cake with Buttercream Frosting

Ingredients:

For the Cake:

1 cup (2 sticks) unsalted butter, softened

2 cups granulated sugar

4 large eggs, room temperature

3 cups all-purpose flour

1 tablespoon baking powder

Β½ teaspoon baking soda

Β½ teaspoon salt

1ΒΌ cups buttermilk, room temperature

1 tablespoon vanilla extract

Instructions:

Preheat oven to 350Β°F (175Β°C).

Grease and flour three 8-inch or 9-inch round cake pans. Line bottoms with parchment paper for easier release.

In a large bowl, cream butter and sugar together until light and fluffy (about 4–5 minutes).

Add eggs one at a time, beating well after each.

In a separate bowl, whisk together flour, baking powder, baking soda, and salt.

Alternate adding the dry ingredients and buttermilk to the butter mixture, starting and ending with flour. Mix just until combined.

Stir in vanilla extract.

Divide batter evenly between the three pans and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.

Let cakes cool in pans for 10 minutes, then turn out onto wire racks to cool completely.

Ingredients:

1 cup (2 sticks) unsalted butter, softened

4–5 cups powdered sugar, sifted

Instructions:

In a large bowl, beat butter until creamy (about 2 minutes).

Gradually add powdered sugar, 1 cup at a time, beating well and scraping sides as needed.

Add vanilla, salt, and 2–3 tablespoons cream. Beat until light and fluffy (about 3–4 minutes).

Adjust thickness: add more cream to thin, or more sugar to thicken.

Assembly:

Level cake layers if needed for flat stacking.

Place one layer on a cake board or plate. Spread a generous amount of buttercream on top.

Repeat with second and third layers.

Apply a thin crumb coat and chill for 15–20 minutes.

Cranberry Orange Pound Cake

Cake Ingredients

2 Β½ cups (315g) all-purpose flour

2 tsp baking powder

Β½ tsp salt

1 cup (226g) unsalted butter, softened

1 ΒΎ cups (350g) granulated sugar

4 large eggs

1 tbsp orange zest (from 1–2 oranges)

Β½ cup (120ml) fresh orange juice

Β½ tsp vanilla extract

Β½ tsp almond extract (optional)

Β½ cup (120ml) sour cream or Greek yogurt

1 Β½ cups (150g) fresh or frozen cranberries (cut in half if large)

1 tbsp flour (for coating cranberries)

White Glaze Ingredients

1 cup (120g) powdered sugar

2–3 tbsp orange juice or milk

Optional: Β½ tsp orange zest for flavor and decoration

Instructions

Step 1: Preheat & Prep

Preheat oven to 350Β°F (175Β°C).

Grease and flour a bundt pan or loaf pan.

Toss cranberries with 1 tbsp flour to prevent sinking.

Step 2: Make the Batter

In a medium bowl, whisk together:

Flour

Baking powder

Salt

In a large mixing bowl, cream butter and sugar until light and fluffy (3–4 minutes).

Beat in eggs one at a time, then add orange zest, vanilla, and almond extract.

Cake Ingredients

Instructions

1. Preheat & Prep
Preheat oven to 325Β°F (163Β°C).

Grease and flour a Bundt pan very well.

2. Cream Butter & Sugar
In a large bowl, beat butter and sugar together for about 5–7 minutes until light and fluffy.

3. Add Eggs
Add eggs one at a time, beating well after each one.

4. Add Flavorings & 7-Up
Mix in the vanilla and lemon extract.

Ingredients

1 cup (2 sticks) unsalted butter, softened

2 Β½ cups granulated sugar

6 large eggs, room temperature

3 cups all-purpose flour

Β½ teaspoon salt

1 cup sour cream

1 teaspoon vanilla extract

1 cup crushed pineapple, well drained (reserve juice for glaze)

For the White Glaze

1 cup powdered sugar

2–3 tablespoons reserved pineapple juice (or milk for a milder flavor)

Instructions

1. Make the Pound Cake

1 cup (240ml) whole milk, room temperature

2 tbsp lemon zest (from 2–3 lemons)

ΒΌ cup (60ml) fresh lemon juice

2 tsp vanilla extract

For the Lemon Glaze:

1 Β½ cups (180g) powdered sugar, sifted

3–4 tbsp fresh lemon juice

1 tbsp milk or cream (optional for creamier glaze)

For the Crunch Topping:

12 vanilla sandwich cookies (like Golden Oreos), crushed

2 tbsp unsalted butter, melted

1 tbsp lemon zest

1 tbsp sugar

Instructions
