šø Book Club Cocktail of the Month: The Indigo French 75 & French 76
To complement this monthās indigo-inspired read, weāll be featuring our signature Indigo French 75 and French 76 cocktails.
These beautiful beverages begin with a butterfly pea flower infusion, created by steeping the dried blossoms in gin or vodka. The result is a naturally vibrant indigo spirit that transforms into stunning shades of blue and purple when mixed with acidic ingredients such as fresh citrus juiceāor even a splash of champagne. š¾
The science behind this magical color change comes from anthocyanins, natural plant pigments also found in red cabbage, blueberries, and other richly colored fruits and vegetables. These pigments are highly sensitive to changes in pH, creating the dramatic color transformation that makes these cocktails as fascinating as they are delicious.
