I was asked what in the heck vanilla bean paste is.
The name is misleading, because this wonderful concoction is actually more of a syrup. It contains the "caviar" of the bean, the tiny little seeds, which give the little black vanilla flecks to ice cream, angel food cake, meringues, etc.
Vanilla bean paste is perfect for meringues, because it doesn't add any water to it like an extract, so you're not left with a gloppy mess.
As yummy as vanilla bean paste is in baked goods, it's also killer as a glaze on grilled (or any) meats. I slathered it all over the brisket in the picture, and it was so tender!!
