Ube Biko Flan — Full Recipe
Ingredients
• Caramel: ½ cup sugar and 2 tablespoons water.
• Ube biko: 1 cup uncooked glutinous rice, 1 cup water, 1 cup coconut milk, ½ cup sugar, ½ cup ube halaya, and a pinch of salt.
• Flan: 4 egg yolks, ½ cup sweetened condensed milk, ½ cup evaporated milk, and 1 teaspoon vanilla.
Method
1. Cook the caramel sugar and water until amber. Carefully pour into a deep, 6-inch heatproof mold, coating the bottom.
2. Gently mix the flan ingredients without whipping. Strain into the mold, cover with foil, and steam gently for about 20–30 minutes, until set enough to support the rice.
3. Rinse the glutinous rice, then cook with the 1 cup water until absorbed. In a nonstick pan, combine coconut milk, sugar, ube halaya, and salt. Add the cooked rice and stir over low heat until thick, sticky, and tender. Add a splash of water if needed.
4. Let the rice cool slightly, then gently spread it over the set flan. Cover and steam for another 15–20 minutes.
5. Cool, then refrigerate for at least 4 hours, preferably overnight. Loosen the edges and invert onto a serving plate so the caramel is on top. Slice and enjoy!
