Stuffed Peppers

6 bell peppers any color, or a combination of colors
2 teaspoons olive oil
1 1/2 pounds ground beef I use 90% lean
Ground
2 cup onion finely chopped
2 teaspoons garlic minced
1 1/2 cups cooked white rice do not use raw rice
salt and pepper to taste
15 ounce can tomato sauce
1/2 teaspoon Italian seasoning
1 1/2 cups mozzarella cheese shredded, divided use
2 tablespoons parsley chopped
cooking spray

1.5 lbs of lean ground meat (substitutes for flank steak 🥲)
1 package of soft taco dinner kit
1 small can of chopped green Chili’s
1 can of enchilada sauce
1 small OR 16 Oz container of sour cream (depending on taste
1 large bag of Mexican cheese

1) cook ground meat/ drain OR
boil flank streak for 2-3 hours until tender, let cool, take a fork and shred it

2) add the packet of enchilada sauce with with 1/2 can of enchilada sauce and the can of green chills. (Cook down. Bring to a simmer. About 15-20 min (set aside)

3) layer as follows:
Spread a thing layer of enchilada sauce, slice soft tacos in half to line the botton if casserole dish, top with ground meat/flank streak, layer with sour cream and cheese.

Repeat until you finish layers (run out of layers.
Top with remaining cheese.

Back at 350 degrees for 20-25 min until cheese is bubbling.
Let cool. Cut into squares.
