fajita chicken casserole 🌮🍗
a creamy, cheesy, flavor-packed casserole loaded with tender shredded chicken and classic fajita flavors. perfect for busy weeknights, family dinners, or meal prep.
ingredients
4 cups cooked shredded chicken
2 cups instant rice, uncooked
1 can (10.5 oz) cream of chicken soup
2 cups chicken broth
1 cup sour cream
1 packet fajita seasoning
1 red bell pepper, diced
1 green bell pepper, diced
1 small onion, diced
2 cups shredded mexican cheese blend
1 tablespoon olive oil
fresh cilantro for garnish (optional)
instructions
1. preheat oven to 375°F (190°C).
2. lightly grease a 9x13-inch baking dish.
3. sauté bell peppers and onion in olive oil for 4–5 minutes.
4. mix chicken, rice, soup, broth, sour cream, and fajita seasoning in a large bowl.
5. stir in vegetables and 1 cup cheese.
6. spread mixture into baking dish.
7. cover with foil and bake for 30 minutes.
8. remove foil, add remaining cheese, and bake 10–15 minutes more.
9. let rest for 5 minutes before serving.
10. garnish with cilantro if desired.
