The shrimp cocktail

Shrimp
-devein and remove shell
-drizzle with olive oil
-squeeze fresh lemon juice
-1 tsp old bay or creole seasoning
cook in foil pouch at 400° for 8-10 minutes

Cocktail Sauce
-1c ketchup
-3.5 tbs chili garlic sauce
-3 tbs horseradish
-1/2 tbs hot sauce
-juice of 1/2 a lemon
-1.5 tbs Worcestershire

Pumpkin chicken quesadillas

Pumpkin Puree

-remove seeds and core of pumpkin

-rub inside with avocado oil

-bake (open side down) in oven at 400°F for 50-60 minutes

-remove from the shell and use a blender or processor to puree

Chicken

-approximately 1 pound boneless skinless chicken thighs seasoned with the following:

  -drizzled with avocado oil

  -1/2 tbs salt

  -1 tsp black pepper

  -1/2 tbs garlic powder

  -1/2 tbs chili powder

  -1/2 tsp cayenne

 

-bake in the oven at 350°F until an internal temp of 165°F is reached

Quesadilla Filling

-use mixer to shred chicken

-1 c pumpkin puree

-1/2 shallot, finely chopped

-1 tbs cream cheese

Use your favorite cheese and flour tortilla to create a quesadilla and cook in an oiled pan or on a flat top until the outside is brown and the filling is melted and hot. Enjoy!

Pumpkin bisque

Pumpkin Puree

-remove seeds and core of pumpkin

-rub inside with avocado oil

-bake (open side down) in oven at 400°F for 50-60 minutes

-remove from the shell and use a blender or processor to puree

Bisque

-3 garlic cloves, minced

-1 red bell pepper

-1/2 red onion

-sauté the vegetables in a saucepan with butter until softened and beginning to brown

-add sautéed vegetables to a blender along with the following:

  -24oz of pumpkin puree

  -13.5oz of heavy coconut cream

  -salt and pepper to taste

-blend until smooth and then return to saucepan

-season with the following:

  -1tbs turmeric

  -1tbs garlic powder

  -1/2 tbs chili powder

  -1 tsp nutmeg

  -cayenne to taste

-bring bisque to a low boil and then simmer on low for 20-30 minutes, stirring occasionally and allowing time for the spices to wake up

Garnish with fresh cream, roasted corn, cilantro, and fresh jalapeno. Enjoy!

Bbq chicken • caramelized onions• toast

Chicken:
Season to taste with salt, pepper, and garlic

For the sauce:
2 tbs butter
1 tbs brown sugar
1c ketchup
1 tbs Worcestershire sauce
1/2 tbs liquid smoke
1/4 c apple cider vineaar

Cook sauce for 10-15 minutes on medium heat, stirring consistently until sauce darkens and has a gloss to it.

Bake assembled toast at 350 for 15 minutes or until cheese is completely melted

Goat cheese and spinach ravioli 🍽️ Yum!!
Ingredients

Ravioli filling:

8oz goat cheese

1/2c chopped mushrooms

1/2 shallot, diced

1/2 tbs creme fraiche

salt to taste

light drizzle of olive oil

1c baby spinach, blanched and chopped

Ravioli dough:

semolina flour (follow instructions on package)

eggs

water

Ravioli in brown butter instructions:

After filling ravioli, boil in salted water until floating. Then immediately add to browned butter and sage in a saucepan. Toss for 1-2 minutes.

Breaded Ravioli:

Do not boil ravioli prior to breading. Dip ravioli in an egg mixture,

coat with flour, dip back in egg, and then breadcrumbs before frying in hot oil. Fry for approximately 90 seconds per side.

Creole curry 🍛

Ingredients

Chicken seasonings
-1tbs black pepper
-1tsp salt
-1tbs ginger powder
-1tsp anise seed
-1/2 tbs coriander
-1tbs chili powder
-1/2 tbs turmeric
-1tbs curry powder
-1tbs smoked paprika
-cayenne to taste

Curry Sauce
-1 can coconut milk, approximately 14 ounces
-3-4 garlic cloves
-1.5 tbs tomato paste
-1/4 c curry powder
-1 tbs chili powder
-juice of 1 lime
-12-15 sprigs of cilantro
-4 dried red chilis (optional for additional spice)
-4-6 ounces of broth to help with consistency if necessary (chicken, vegetable or bone)

Vegetables
-red onion
-white onion
-celery
-carrots
-bell pepper
-garlic

Steps:

-Sautee chopped vegetables until aromatic
-add seasoned, chopped chicken and cover with lid to allow to cook on med heat
-add curry sauce ingredients to blender and mix well; taste for spice and flavor to adjust accordingly
-add sliced sausage to pan with chicken and vegetables then add in curry sauce
-cover with lid and allow to cook for roughly 20-30 minutes stirring frequently; curry should reach a high temp and begin to boil allowing flavors to enhance
-add frozen lima beans and any additional spices
-allow to cook for another 10-12 minutes allowing beans to heat thoroughly

Enjoy over rice with fresh cilantro or with your favorite naan
