🥑 Avocado Pasta Salad 🥗
Ingredients:
🍝 2 cups cooked pasta (penne, rotini, or fusilli works well)
🥑 2 ripe avocados, peeled and pitted
🍋 2 tablespoons lime juice
🧄 1 clove garlic, minced
🥄 1 teaspoon Dijon mustard
🧂 Salt and pepper to taste
🍅 1 cup cherry tomatoes, halved
🥒 1/2 cucumber, diced
🌿 1/4 cup fresh cilantro, chopped (optional)
🧅 1/4 red onion, finely chopped
Directions:
1️⃣ Cook the pasta 🍝 according to package directions, then drain and rinse with cold water to cool.
2️⃣ In a blender or food processor, combine the avocado 🥑, lime juice 🍋, garlic 🧄, Dijon mustard 🥄, salt, and pepper 🧂. Blend until smooth and creamy.
3️⃣ In a large bowl, combine the cooled pasta 🍝, halved cherry tomatoes 🍅, diced cucumber 🥒, chopped red onion 🧅, and fresh cilantro 🌿.
4️⃣ Pour the avocado dressing over the pasta and toss gently to coat all the ingredients evenly.
5️⃣ Taste and adjust the seasoning with more salt and pepper if needed.
6️⃣ Serve chilled for a refreshing dish!
Tips:
To prevent the avocado dressing from browning, squeeze a little extra lime juice on top before serving.
For added crunch, top with some toasted nuts or seeds like sunflower or pumpkin seeds.
