- Jill Hamill’s Food Prep students at recently explored the history and art of sushi-making while celebrating Japanese cuisine and Asian American and Pacific Islander Heritage Month! Students learned that “sushi” refers to vinegared rice, not the fish, and discovered how sushi originated as an ancient fish preservation method.

Using ingredients like ahi tuna, shrimp, imitation crab, chicken, avocado, cucumber, carrot, and mango, students practiced rolling sushi with bamboo mats to create perfectly shaped rolls. For many, it was their first time trying sushi, making it a fun and memorable hands-on learning experience for everyone involved!

It's safe to say we ate SO GOOD on our trip! Both of these beautiful countries had some of the best food I've ever had and I really enjoyed trying regional favorites! The kibbeling, stroopwafel, and frites were especially good, but I honestly liked it all 🤤 If I have one piece of advice, it's to travel the world & eat all the food!!!! So much out there to discover 🥰

Two recent "Here comes the son" baby shower cakes 👶🏼🩵🌞 One for friends expecting a boy and one for a coworker expecting his first son after 3 daughters!

Love how both cakes came out.. both were a hit!

The first was vanilla chiffon cake with raspberry jam and the second was a lemon blueberry cake with whipped topping filling 🤍

- "At the 23rd Annual Executive Briefing, Culinary Arts and Food Prep students showcased their talents by preparing a delicious three-course meal for school board members and superintendents from our component districts. Attendees also heard from Brian Cechnicki, Executive Director for the Association of School Business Officials of NY, who shared insights on the 2026-27 state budget and what it means for school districts." . . . . . . . . . . . . . . .

SO proud of all of the students and staff who worked so hard to make this dinner a success! The students worked collaboratively between front-of-house and back-of-house to ensure a smooth service and it was priceless seeing their smiles and excitement after it was all over!

To start off the meal, my students prepared an amuse bouche (chef's tasting) for all of the guests.. A fried green olive stuffed with boursin cheese with roasted garlic aioli & marinara sauce

They also prepared one of the appetizers- gorgeous pan-fried Japanese gyoza, which I sadly never got a picture of in the midst of the chaos 😭 they did such a good job!!

We also made the 4 dessert choices!

☆ Orange possets with chocolate shavings & candied orange peel 🍊
☆ Dubai Chocolate ice cream- vanilla ice cream with chocolate ganache & pistachio kataifi swirls- topped with mascerated strawberries & served with a pistachio lace cookie 🤤

This week I kept meal prep pretty simple with a soup and tuna pasta. Soups are one of the easiest meals to prep because there's only one pot and you can use up whatever you have in your fridge or pantry!

I made a Korean-inspired kimchi soup with ground turkey, Yukon potatoes, carrots, kimchi, scallions, Korean fish cakes, gochujang, gochugaru, garlic, ginger, soy sauce, sesame oil, and homemade chicken stock 😋 It came out soo flavorful and has so many health benefits and nutrients!

I also made a protein pasta dish with canned tuna, asparagus, fresh tomato, garlic, lemon juice, olive oil, and parmesan cheese! My dad used to make a tuna and pasta dish when I was younger and I always loved it. Canned tuna is packed with protein and is so good with pasta!

Snow storms = lots of time cooking for me 😆

Yesterday, I spent most of the day in the kitchen, which was so nice! In between cooking & baking, I watched the birds at my feeder while the snow came down ❄️🐦

I managed to make quite a few things, including:
☆ 2 loaves of sourdough 🥖🫓
☆ Pastina & chicken egg drop soup with sourdough to dunk.. perfect snow day meal 🥣
☆ Dashi stock - which I then used to make udon noodle soup for lunch this week. The soup has baby bok choy, shiitake mushrooms, shredded chicken, and Thai red chili for some heat 🍜
☆ Birria short rib... which I then used to make birria short rib enchiladas for dinner this week 🤤
☆ Garlic confit, which 🐈‍⬛ sous chef had to sniff
☆ Almond flour banana pancakes topped with maple syrup, chunky peanut butter, and berries 🥞
☆ Avocado sourdough toast topped with caprese salad with a side of sunny eggs 🍳🥑

This cold & dreary weekend called for a hot bowl of pork belly ramen 🤤 with baby bok choy, a soft-ish egg, and the most savory rich broth 🍜 I made the pork belly in the instant pot on the pressure cook setting for 25 minutes and it came out perfectly tender!

For meal prep this week, I made Japanese beef curry with potatoes, carrots, onions, peas, and jasmine rice. I made the stew in the crockpot and then used the liquid to make the curry sauce. I wasn't sure what to expect, but this came out 10/10! The perfect cozy meal for this frigid weather!

I also prepped some Bircher muesli (Swiss overnight oats) with fruit for breakfast and spinach turkey burgers for lunch 😋

I heard we're throwing it back to 2016??

Wow, what a year it was!

2016 is when my spark ✨️ truly got ignited. I started classes at and I knew from that very first class that I was on the right path.

That summer season, I worked in the kitchen at a local golf course before starting at The Watermill in Smithtown where I'd work for the next year & half. It was truly one of the most fun and exhausting jobs and I learned SO much during my time there.

Easy, nourishing & delicious meal prep this week!

☆ Turkey chili with onions, sweet peppers, jalapeno, black beans, zucchini, tomatoes & spices. One of my favorite meals to prep and an easy way to use up veggies. I like to add zucchini for my more volume, vitamins & minerals. I often throw in quinoa too, for an added bump in fiber and protein. I topped this with cheddar cheese & eat it with a dollop of 0% non-fat greek yogurt 😊

☆ Chicken pad-thai with beech mushrooms, bean sprouts, scallions, garlic, protein spaghetti, peanuts & cilantro. I didn't have any tamarind paste for the sauce, so I substituted brown sugar, rice vinegar, soy sauce, and sesame oil. Not authentic, but definitely delicious.

A weekend of tuna & sushi making 🥰

Friday, I taught , , & little Layne how to make sushi 🍣 I purchased sushi-grade tuna and salmon from , both of which were fresh and delicious! We all had fun and were in a sushi coma 😴 after. I love cooking with friends 🧡

Yesterday, I used the leftover tuna to make a poké bowl with sushi rice, avocado, cucumber, kewpie mayo, and Sriracha. Definitely one of my favorite dishes!

Tonight with the last piece of tuna, I crusted it in sesame seeds and seared it on all sides. I sliced it and put it over sushi rice and a baby spinach salad with red cabbage, cucumber, avocado and a ginger soy vinaigrette. Flavorful, light, and delicious!
