Ribeye steaks for supper!!

Kosher salt
Black pepper

Set pit @ 400 degrees
Steaks at room temperature
Put steaks on pit, flip every 2 minutes spraying pig stand basting sauce on each side. Cook about 5 minutes at most on each side for medium rare!! Amazing taste.

SHRIMP DIRTY RICE
Ingredients:
1 lb hamburger meat
1 lb ground pork sausage
10-12 shrimp, tail off and deveined
4 cups cooked rice
2 cups broth, I used better than bouillon chicken
1.5 cup mixed onions and bell peppers chopped
3 tbsp veg oil, divided
1 tsp seafood seasoning
1/4 cup flour
1 tbsp oregano
3 tsp minced garlic
1 tsp thyme
1 tbsp garlic powder
1 tsp onion powder
1 tsp chili powder
1/2 tsp pepper, more to taste
1/2 salt, more to taste
Pinch of cayenne pepper
Instructions:
Season shrimp with seafood seasoning.
Over medium high heat add 2 tbsp oil and cook shrimp on each side 2-3 minutes until they make a nice 3 shape. Remove from pan.
In a large skillet add 1 tbsp oil and then ground meats. Once the meats begin to brown add in onions, peppers and garlic.
As soon as meat is fully browned add in seasonings. Next add in flour, stirring well. Add in broth and simmer 5-7 minutes.
Add in rice and simmer another 5 minutes or so. Add shrimp back in. Enjoy!

Crawfish deviled eggs AND or dip

Crawfish dip/ crawfish deviled eggs

1 dozen boiled eggs
1/2 cup of creole mix/ season blend
2 Teaspoons minced garlic
2 cups of precooked Crawfish or raw peeled Shrimp
(Make sure they are devained)
2 Tablespoons butter
Mayonnaise to proper consistency
1 Teaspoons of mustard
Crawfish boil seasoning to taste( powder)

Instructions :

1. Boil eggs
2. In cooking skillet on medium heat, put butter until melted. Add Crawfish/Shrimp, season blend and garlic. Sauté slightly. Until season blend is soft.
For deviled eggs
3. With peeled eggs, cut in half and remove yolk.
4. In food processor/ food chopper put meat mix, egg yolk and vegetable mix. Blend until it turns to a paste or finely chopped.
5. Place mixture from processor/chopper into separate bowl. Add mayonnaise and mustard to desired consistency. Add crawfish boil to taste.
6. Fill cut egg whites and chill before serving.
FOR DIP

1. Add meat mixture, vegetable mixture and egg whites and eggs yolks into processor/ chopper. Add mustard, mayonnaise to proper consistency and Crawfish boil to taste.
2. Place in bowl and chill.

My Hawaiian Style Jalapeno Pepper Popper

8 to 10 whole jalapeños makes 16 to 20
I block of 8 oz cream cheese or 8 oz container of whipped cream cheese
I small can of crushed pineapples
Half cup of brown sugar(light)
Half cup of shredded Colby jack or Monterey Jack cheese(prefer fine shred but doesn’t matter)
I teaspoon of chipotle pepper powder(to taste)
Optional: Tony’s Cajun season 1 tablespoon
Hickory Bacon(if u can find thin sliced even better)
Pack of hillshire farms cocktail sausage(prefer ones with cheese in them)or can of spam sliced the size of the pepper

In a bowl take whole block of cream cheese, let sit out on cabinet to soften even more, half can of crushed pineapple, chipotle pepper, shredded cheese, Cajun season, brown sugar. Mix throughly, should be a little thick.

Jalapeño prep:
Cut jalapeño in half length ways. Leave top stem on (so filling doesn’t run out while cooking)
Take teaspoon and scrape out veins and seeds.
Scoop filling into jalapeño half, smooth out to be level of the jalapeño. Take cocktail sausage place on center of jalapeño half on top of filling. Take slice of bacon and wrap from one end to the other of the jalapeño. Use toothpick to hold bacon end on the jalapeño.
Oven cooking:
Pre heat oven to 350:
Place poppers on cooking sheet or rack and cook for approximately 30 to 45 minutes. (To desired way u like ur bacon cooked.)

Cabbage Roll Recipe

5lbs of ground chuck(ground meat doesn’t yield as much meat)
5 cups of uncooked rice
2 large yellow onions(diced small)
2 table spoons minced garlic
2 Bell Peppers (diced small)
4 cans of Rotel
1 square box of chicken broth(stock)
2 large heads of cabbage
2 sticks of real butter
2 to 3 cups of shredded cheese(any kind)
1/2 cup of Slap Your Mama

Take cabbage and cut off the base. Soak in hot water in sink to make leaves soft and easy to roll. While cabbage is soaking prepare mixture. In large mixing bowl, add meat, two cans of Rotel, onions, bell peppers, garlic and seasoning, add rice slowly.(u may or may not need all 5 cups).
Mix throughly making sure sure rice isn’t clunked up together, if mixture seems a little dry add about 1/2 cup of chicken broth.
Start unrolling cabbage leaf by leaf. Place small portion with spoon on each leaf. Roll and place in large pot. Once bottom layer is done, pour about 1/4 can of rotel over layer. Keep stacking rolls. Between each layer pour a little rotel. Once all rolls are done, pour remaining rotel over top layer. It’s one cup of rice to one cup of either chicken stock or water. Then add one more cup. Put both blocks of butter on top. Bring to a boil and boil almost all the juice out(just like cooking rice on a stove top), put on low heat and cover for approximately 20 to 25 minutes. Take one roll out and check to see if rice is completely cooked. If not add about a cup of water cover and cook for another 15 minutes.
