SWIM. BIKE. RUN.

The XTERRA World Championships are almost here! This Saturday, October 10, athletes from 41 countries will take on the trails, terrain, and elevation of Ruidoso. Here is a look at the off-road race courses!

🏊 SWIM | 1500M
The race kicks off in the waters of beautiful Grindstone Lake, where athletes will begin with an in-water start near the boat ramp by the dam.

🚵 BIKE | 27K
The single-lap mountain bike course takes athletes through Grindstone Mesa and Sawmill Canyon, showcasing some of our area’s incredible trail systems.

🏃 RUN | 10K
The final stretch is a rolling, leg-burning course! Runners will make their way from Wingfield Park toward Grindstone and back before crossing the finish line.

Come out Saturday to cheer on the athletes as they compete for a World Championship title! Whether you are watching from the trails or welcoming racers across the finish line, it is going to be an exciting day for our community!

Caramelized Honey Balsamic Brussels Sprouts 🥦🍯
Easy caramelized Brussels sprouts side dish for holidays or Sunday dinner, with a sticky honey balsamic glaze and crispy edges.

You’ll Need (serves 4):
• 1.5 lbs. Brussels sprouts, trimmed and halved
• 1.5 tbsp olive oil
• 1/2 tsp salt · 1/2 tsp black pepper
• 1/2 tsp garlic powder · 1/2 tsp dried basil

Honey balsamic glaze:
• 1 tbsp butter
• 3 cloves garlic, minced
• 1/4 cup balsamic vinegar
• 2 tsp low-sodium soy sauce
• 3 tbsp honey
• 1 tbsp whole-grain mustard
• 1/4 tsp ground ginger

How to Make it:
Toss Brussels sprouts with olive oil, salt, pepper, garlic powder, and basil. Roast on a lined pan at 425°F for 20–25 minutes, stirring once, until browned and crisp on the edges. While they cook, melt butter in a small pan, add garlic for 1 minute, then stir in balsamic, soy sauce, honey, mustard, and ginger. Simmer 2–3 minutes until slightly thick. Pour the warm glaze over the hot sprouts and toss until glossy and caramelized.

Tip:
Serve with roasted chicken or turkey and a small bowl of cottage cheese with herbs on the side for extra protein.
