Made some Italian wedding soup for dinner tonight. Such a great way to get my family to eat more veggies!
Now I'm not the biggest recipe user, but here are the basics so you can adjust it to make it for one person or a large group 😁
-Brown some meatballs (make them fresh, or use store-bought frozen or homemade frozen )in a little olive oil, Italian seasoning, parsley, and garlic
-When they are cooked through and browned pull them out of the pan into a bowl.
- Saute diced onion, celery, and carrots in the pan from the meatballs. If you need to add a little olive oil or any extra seasoning you can
- Once the veggies are done to how you like them, add chicken broth based on the quantity of soup you want to make and proportion of meatballs and veggies to broth
- When it comes to a boil add in acini de pepe or orzo, the meatballs and some diced spinach and let it simmer for about 5 minutes. Taste it and see if you need to adjust any seasonings, and you are done!

This really comes together quickly for an easy dinner, and my kids love to help! Tonight we used meatballs that seemed a little big so we sliced them before we added them to the soup. I've used freeze-dried spinach or kale in the past as well. Sky's the limit to play with it!

💞 I LOVE that Pampered Chef gives to others. It's one of the things that draws me to loving this company the way that I do! Today is Giving Tuesday and I would love to help contribute to the cause.

Did you know that every set purchased provides 10 (YES 10!) meals through Feeding America on behalf of local member food banks.

The set also coordinates with our Coated Cutlery and Flexible Cutting Mats.

I would like to sell 10 sets today for Giving Tuesday. That will provide 100 meals through Feeding America for those in need.
