High-Protein Low-Carb Cheesy Beef Quesadillas

📋 Ingredients:

• 1 lb lean ground beef
• Keto wraps
• 1 ½ cups shredded Mexican-blend cheese or cheddar
• 2 tbsp cream cheese
• 2 tbsp taco seasoning
• Salt and pepper to taste
• Cooking spray or 1 tsp olive oil

🧑‍🍳 Instructions:

1. Heat a skillet over medium heat.

2. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain excess grease if needed.

3. Stir in taco seasoning , salt, pepper, and cream cheese. Cook 1–2 minutes until creamy.

4. Lay a keto wrap flat. Add a thin layer of cheese, some beef mixture, then more cheese on one half of the wrap. Fold over.

5. Spray skillet lightly with cooking spray. Cook quesadilla 2–3 minutes per side until golden and crispy.

6. Slice and serve warm.

🤫 Kid-Friendly Secret:

Mix the cream cheese into the cooked beef while it’s hot. It makes the filling extra creamy, helps the cheese melt beautifully, and gives the quesadillas a “cheesy taco” flavor kids usually love. You can also finely grate a little zucchini into the beef — it blends in almost invisibly.

Air Fryer Chicken Parmesan

📋 Ingredients:

• 2 large boneless skinless chicken breasts, sliced in half lengthwise
• 1 egg, beaten
• 1 tbsp olive oil
• 1/2 cup grated Parmesan cheese
• 1/2 cup crushed pork rinds or almond flour
• 1 tsp garlic powder
• 1 tsp Italian seasoning
• 1 tsp onion powder
• 1/2 tsp paprika
• Salt and pepper
• 1/2 cup low-sugar marinara sauce
• 1 cup shredded mozzarella cheese
• Fresh basil or parsley (optional)

🧑‍🍳 Instructions:

1. Preheat air fryer to 390°F.
2. Pat chicken dry and season lightly with salt and pepper.
3. In one bowl, whisk egg with olive oil.
In another bowl, mix Parmesan, pork rinds (or almond flour), garlic powder, Italian seasoning, onion powder and paprika.
4. Dip chicken into egg mixture, then coat well in the Parmesan mixture.
5. Air fry for 10 minutes, flip, then cook another 4–6 minutes until golden and cooked through.
6. Spoon marinara over each piece and top with mozzarella.
7. Air fry 2–3 more minutes until cheese melts.

🤫 Kid-Friendly Secret:

Blend a spoonful of cottage cheese into the marinara sauce before adding it to the chicken. It makes the sauce creamier, adds extra protein, and many kids won’t notice it.

Another trick: cut the chicken into “pizza strips” before serving. Kids usually love dipping them into warm marinara.

Sloppy Joe Grilled Cheese

📋 Ingredients:

• 1 lb Lean ground beef (93/7) or ground turkey
• 1/2 cup Rao’s Homemade Marinara (or any no-sugar-added tomato sauce)
• 2 tbsp Tomato paste
• 2 tsp Yellow mustard
• 1 tsp Garlic powder
• 1 tsp Onion powder
• 2 tbsp Powdered erythritol or monk fruit sweetener (allulose also works great for melting)
• 2 tbsp Water
• 4 slices Keto Hawaiian square bread
• 1 cup Shredded cheddar cheese (or 4 slices of cheddar/provolone)
• 2-3 tbsp Butter or mayonnaise (for toasting the bread)
• Salt and pepper to taste

🧑‍🍳 Instructions:

1. Brown the Meat:
In a skillet over medium-high heat, brown the ground beef or turkey, breaking it up into very fine crumbles. Drain any excess fat.

2. Simmer the Sauce:
Turn the heat down to low. Add the marinara, tomato paste, mustard, garlic powder, onion powder, sweetener, and water. Stir well and let it simmer for 3–5 minutes until the sauce is thick and binds to the meat. Season with salt and pepper to taste. Remove from heat.

3. Assemble:
Butter one side of each slice of keto Hawaiian bread. On the unbuttered side of two slices, place a layer of cheese, a generous scoop of the sloppy joe mixture, and another layer of cheese (this acts as the "glue"). Top with the remaining bread slices, buttered side out.

4. Toast:
Place the sandwiches in a clean skillet over medium-low heat. Press down gently. Cook for 3–4 minutes per side until the bread is golden brown and the cheese is completely melted.

Finely grate a quarter cup of zucchini or yellow squash directly into the meat sauce while it simmers.
