Fancy Food Friday!

Made some seafood pasta with little neck clams, mussels, and shrimp. Steamed the shellfish in a white wine butter garlic sauce and poured it over the top of everything once plated. Garnished with lemon zest and parsley.

Testing out a few new wing marinades this week... Can't wait to see how they turn out!

Ghost Pepper marinade
Fresh ghost pepper, lime juice, EVOO, salt, pepper, garlic powder, and onion powder.

Hot Honey Lemon
Mike's hot honey, salt, pepper, lemon juice, and EVOO

Garlic Sriracha
3 garlic cloves, Sriracha, Kewpie mayo, red pepper flakes, salt, pepper, and garlic powder

Gonna let them marinate for a few hours, maybe overnight, and then grill them to perfection

You guys, this Mediterranean Bean Salad actually made me do a happy dance! It is bursting with color and, most importantly, flavor! For an added bonus, it only takes about 10 minutes to make.

Mediterranean bean salad.

1 can black beans
1 can red kidney beans
1 can navy beans
1-2 carrots chopped
½ English cucumber chopped
2 tsp minced shallot
Feta
Parsley
Kalamata olives
Dill, salt, and pepper to taste

Drain and rinse your beans and add to a bowl with the veggies, feta, and olives.. top with chopped parsley

For the dressing
1 can canellini beans (do not drain)
2-3 cloves garlic
Juice of 1 large lemon
Salt (about 1-1½tsp)

Blend together until smooth and pour over the bean salad.

For a crispy topping..

1 can of garbanzo beans drained, rinsed, and patted dry

Coat lightly with olive oil and season with salt, pepper, garlic powder, paprika, tumeric, and a pinch of cumin.

Spread evenly on a parchment lined cookie sheet and roast at 400° until crunchy and crispy

Jalapeño boudin, bacon, fried potatoes, habanero, and onion hash topped with cheese, sunny side up eggs and habanero salsa.

Last date night at the Bier Garten on the Riverwalk since they close for good tomorrow. It was great seeing again too!

I feel like I've stumbled into an alternate universe.. I managed to have all cookies baked and decorated by 3:30pm on Christmas Eve. I'm usually decorating well into the night heading into Christmas morning. I have no idea what to do with myself right now.

Beef stir fry for dinner tonight! It's a quick and easy weeknight dinner. I marinate the beef in the morning, or overnight, then while the rice cooks I stir fry the beef and then the veggies. I mix the beef back into the veggies once done and by that time the rice is done.

Plate it up and enjoy!

Who knew fried rice was so easy to make?!? I made it for the first time today and, let me tell you, it was so easy and only took about 5 minutes. I topped it with some seared ahi tuna, edamame, sriracha mayo, sesame seeds, nori, and some coconut aminos mixed with wasabi.

It was amazing! All in all this dinner only took about 15 minutes from start to finish. Its great for a quick weeknight meal.
