I love looking back on our courthouse wedding photos and will probably repost every year 😂.

People asked often if we wanted to have a “real wedding” at some point. I appreciate the sentiment (given this was not what we initially planned) but it was 100% real, special, and exactly the right choice for us! While not everyone we love could be there, it was a wonderful day.

🌸 Flower Shortbread🌸 [RECIPE ⤵️]
* 3/4 cup room temperature butter, like
* 1 1/4 cup all purpose flour
* 1/3 cup + 2 TBS powdered sugar
* 1/4 tsp salt
* 1/2 tsp vanilla or almond extract, optional
* 1 cup edible flowers, like pansies

1. Using a stand or hand mixer, beat butter for about one minute until it is smooth and creamy. Add in flour, sugar, salt, and extract if using. Beat until smooth and just combined, but not for too long (over-beating can make it tough). Ideally, your dough is crumbly but sticks together when pinched.
2. If you're in a warm room, it's likely the dough is getting pretty soft. This can be hard to work with, so I recommend popping it in the fridge for 5-10 minutes, until it's easier to roll out.
3. For the first way, lightly flour a surface and place your ball of cookie dough down. Dust with more flour and roll out into a large rectangle with a thickness of about 1/2 inch (1.3 cm). Using a circular cookie cutter, punch out cookie shapes, re-rolling the scraps as necessary until you've used them all. The amount of cookies you make will depend on the size of the cutter, but I recommend something 1-2 inches in diameter (3-5 cm).
4. Once you have all the circles in place, add them to a lined cookie sheet and preheat your oven to 350 degrees F.
5. Carefully press each edible flower into each cookie in whatever design you like.
6. Bake shortbread for 12-14 minutes, until lightly golden. They will bake a bit more as they cool on the surface of the cookie sheet. After 5 minutes, remove from sheet to fully cool on a wire rack. Store in a sealed container for up to four days (keep in mind that the cookies will soften a bit as they sit).

[RECIPE BELOW - Save this post to make Crispy Coconut Tofu🥕]

It’s a scientific fact that most of my dinners need 45+ different colors/textures to be satisfying. This fits the bill. 😂😋

INGREDIENTS:

1 14 oz block firm or extra firm tofu
1/4 cup tamari (or soy sauce)
1 TBS maple syrup
2 tsp grated fresh ginger, a pinch of red pepper flakes, and one clove minced garlic (all optional, but helpful for more flavor)
1/2 cup plain unsweetened almond milk
1/2 lime, juiced (1–2 TBS)
2 TBS cornstarch, arrowroot, or flour of choice (to thicken)
Pinch of salt
1/2 cup Panko bread crumbs*
1/2 cup unsweetened shredded coconut

Open package of tofu and place in a large dish. Add a heavy pot on top to press out additional water. This allows for the tofu to soak up the marinade as much as possible. Let it sit for 10-15 minutes to release water. Drain water out of the dish and slice tofu into large cubes.
Mix marinade of tamari, maple syrup, and grated ginger and pour over tofu. Let sit for at least 5 minutes to soak in these flavors. Preheat the oven to 400 degrees F.
Mix batter in a medium sized bowl by combining nondairy milk, lime juice, cornstarch, and salt. In another bowl, mix Panko and coconut. Place these two bowls in a line next to a lined and oiled baking sheet. This will be your breading station.
To bread tofu, remove each piece from the marinade and dip into the milk batter, swirling to coat. Then, immediately dredge in the coconut/Panko mixture, pressing to ensure each side is covered fully. Place on lined baking sheet and repeat until all tofu pieces are used.
Bake for 15 minutes, remove from the oven, and carefully flip each piece (take care to not remove some of the coating when doing this, as it can stick. Bake for 10-15 more minutes, until browned but not burnt.
