1 tbsp olive oil

Instructions:

Preheat oven to 375°F (190°C). In an ovenproof skillet, cook bacon over medium heat until crisp; remove and drain on paper towels.

Discard excess fat, leaving 1 tbsp in pan. Sauté kale until wilted, then add tomatoes and cook 1 minute.

Whisk egg whites with milk, salt, and pepper; pour into skillet and stir gently to distribute vegetables and bacon.

Cook undisturbed 2–3 minutes until edges begin to set.
