Did you know that the food you eat today will literally become part of the body you live in tomorrow? Every cell in your body is built, repaired, and maintained using nutrients from the food on your plate. Your skin, your hair, your energy levels, your immune system—even your ability to age well—is influenced by what you consistently feed your body.

We often think of food as calories, but food is actually information. Every ingredient sends signals throughout the body, either supporting health or contributing to inflammation. That’s why I love cooking with simple, whole ingredients like these.

🌿Spinach is one of nature’s most nutrient-dense foods. It’s rich in iron, folate, vitamin C, and vitamin A, nutrients that help support healthy blood circulation and oxygen delivery throughout the body. It’s also packed with antioxidants that help protect the skin from everyday environmental stressors.

🧅 Onions are much more than a flavor base. They’re rich in compounds that help support the body’s natural detoxification pathways and may help reduce inflammation. They’re also a source of prebiotic fiber, which feeds the beneficial bacteria in your gut. And a healthy gut often shows up as healthier skin.

🧄 Garlic has been treasured as both food and medicine for thousands of years. It contains sulfur compounds that support immune function, heart health, and the body’s natural defense systems. It’s one of those ingredients that works quietly behind the scenes to support overall wellness.

🪴 Cumin adds warmth and depth to a dish, but it also contains powerful antioxidants and may help support healthy digestion. And when digestion is functioning well, your body is often better able to absorb the nutrients it needs.

🥀And then there’s sumac—one of my favorite spices. Its bright, tangy flavor comes with an impressive amount of antioxidants that help combat oxidative stress, one of the factors associated with aging and cellular damage.

Cooking can be overwhelming,
so make a simple, filling, easy to make meal instead like my Chunky Bean Salad.

Ingredients:
1/3 cup red onion, julienne slices
1/3 cup tomatoes, large slices
1/2 cup cucumbers, rounds
1/2 cup colorful peppers
1 cup marinated artichoke hearts
4 green onions, wide slices
1 can kidney beans (or beans of choice)
1/4 cup feta cheese

Dressing:
6-8 oz lemon juice
1/2 tbsp mint
1/2 tbsp sumac
2 tsp salt
4 tbsp extra virgin olive oil
1 garlic clove, crushed

Lemon Orzo with Chicken

1 lb (454 g) orzo, cooked according to box instructions
3 chicken breasts
4 cloves garlic, minced
1 small lemon, juiced
4 cups fresh spinach
1 1/4 cup chicken broth
1 cup heavy cream (or 1 1/4 cup milk)
1/2 tsp lemon zest

Chicken spices:
1/2 tbsp Aleppo pepper
1/2 tbsp sumac
1/2 tbsp smoked paprika
1 tsp black pepper
1/2 tsp oregano
1/2 tsp dried basil
*3-4 tbsp neutral oil to sauté chicken

Instructions:
1- Cook orzo until slightly undercooked. You want it to be parboiled because it will cook further in the sauce
2- Add oil to a pan. Heat the pan for 1-2 minutes then sauté chicken for 2-3 minutes on each side. Once finished place chicken in a dish
3- Lower the heat and in the same pan, sauté garlic for 1 minute then add chicken broth, lemon juice, and heavy cream. Allow to heat up for about 2 minutes then add all the spices and give it a good mix
4- Add orzo, lemon zest, and spinach. Flatten them out then add the chicken on top.
5- Cover and cook on low for 10-15 minutes.

Imagine a rice dish that is layered and cooked to perfection. It has the shape of a cake and the flavor of smoky spices. That’s what you get when you make Maqlouba, a traditional Levantine dish that originated in Palestine and Jordan. The dish has traveled across the Levant including Lebanon, Syria and Iraq.
It is a symbol of resilience and eaten during celebrations.

I added the ingredients below but I wrote an in depth step-by-step recipe that wouldn’t fit here 🫣, so I put that part in the comments section.

Don’t feel overwhelmed when you see how many ingredients and steps there are…I just made this very detailed so that you can easily follow along.

Ingredients:
5 lbs boneless short ribs
4 med potatoes, sliced into thin rounds
3 large eggplants, cut in 1 inch thick rounds
3 long carrots, cut in quarters
3 inches ginger
1 tsp by peppercorns
3 cardamom pods
1 TbSp black pepper
1.5 TbSp Aleppo pepper
1/2 TbSp allspice
1 tsp sumac
1 TbSp onion powder
1 TbSp salt
1 TbSp seasoned salt
3-4 bay leaves
4 TbSp butter
3 TbSp ghee
3 TbSp extra virgin olive oil
3 cups long grain white rice (or rice similar to Ben’s Original )
*Optional: Better Than Bouillon Roasted Beef Base

I didn’t know how to cook anything when I first got married. I began asking for recipes from my aunts, my friends, my mother in law and my mom. I took those recipes and wrote them down to preserve their authenticity.
Once I perfected a recipe I began to play with it to make it more custom to me and my little family.

Greetings from Disneyland, aka the 160 acre land of mass produced, calorie packed treats (that hike up one’s cholesterol just by smelling them)!
I spend half my time here eating and the other half whining about why the lines are so long. I’ve convinced myself that the 20,000 steps I make negate the 10,000 calories I ingest. After all, we are in a magical place and the calories just disappear, right??
