30 min Salmon Foil Packet
So easy with my Dill/Lemon/Parsley butter!
10 oz Salmon
2 TBL Dill/Lemon/Parsley butter sprinkled on top
Salt & Pepper
Drizzle of olive oil
Layer with thin sliced lemons

350 degrees 30 min

Enjoy!

Tip: dice up side vegetables and add to the party

Tip: use leftovers (if there are any) to make salmon salad
Green onion/carrots/ 2 parts Mayo > 1 part sour cream salt and pepper.

My husband won’t eat salmon but tells me this is the best Tuna fish salad he has ever had! (Wink Wink)

My butter blends take the guess work out of cooking by adding balanced behind the scene flavors and set the stage for perfect outcomes.

10 MINUTE ALFREDO SAUCE

1/3 Container Carol's Garlic butter (approx 3 Tbl)
1/2 Container Carol's Parmesean/Parsley Butter (4 Tbl)
4 TBL flour

3 cups warmed milk (2% or half and half)

Cup of dried or fresh Parmesan cheese (I add until desired consistency)

1/4 tsp nutmeg
1/2 tsp salt
1/4 tsp pepper (optional)

Directions:

Melt butter in pan over Med heat until melted. Add flour and whisk for about 2 minutes (it will thicken to a paste)

Add milk

Increase heat (Med-high) and continue to whisk until it comes to a very soft boil and thickens to the consistency of gravy (about 2-4 min).

Once thickened (a loose gravy) turn heat to a simmer (low heat). Add in a cup or two of Parmesan cheese. The amount of cheese will vary each time you make it. Start with one cup and add until it thickens to desired consistency.

Add 1/4 tsp Nutmeg and salt to taste.

Tip: I use dried Parm cheese with Alfredo. It's my personal preference since I feel the dried tends to have a slightly stronger flavor than the fresh....but that's my personal opinion.

Top your favorite Pasta and with garnish with some Parmesan & Parsley.

Au Gratin Potatoes

3 LB Yukon potatoes
1/3 of (container) Garlic butter (approx 3 TBL)
1/2 container Parm butter (5 TBL)
3 cups warm milk
Salt/pepper/nutmeg
12 TBL flour

Three layers:
Layer 1/3 of your potatoes

Sprinkle 4 TBL flour

Crumble 1/2 of frozen Parm and sprinkle on top

- salt- pepper

Repeat another layer Potatoes: flour/salt/all the garlic butter

Repeat layer potatoes
Flour/salt/remaining Parm butter

Pour warm milk until 3/4 from the top

Top with a little nutmeg and a light layer of Parm cheese if you have it on hand.

Cover w/foil and place on rimmed baking sheet

Cook 400 degrees for 1 hour

Remove foil Increase heat to 425 degrees for 20 min

Enjoy!

Hello! Thank you for visiting Carol’s Butter! Making compound butters has been a passion of mine for many years! It all started with a couple of twins and not a lot of time to cook!
