**Chicken Parmesan Stuffed with Cream Cheese**

Ingredients:

- 4 boneless, skinless chicken breasts
- 1 cup cream cheese, softened
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese, plus more for topping
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup Italian breadcrumbs
- 2 cups marinara sauce
- 2 tablespoons fresh basil, chopped (optional)
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil for frying

Directions:

1. Preheat your oven to 375°F (190°C).

2. In a mixing bowl, combine cream cheese, mozzarella cheese, grated Parmesan cheese, minced garlic, and chopped basil. Season with salt and pepper, and set aside.

3. Create a pocket in each chicken breast: place one hand on top of the breast and use a sharp knife to slice into the side of the breast, cutting to but not through the other side. Be careful not to cut the chicken breast all the way through.

4. Stuff each chicken breast with the cream cheese mixture, dividing it evenly among the four breasts. Secure the open sides with toothpicks if necessary to keep the filling inside.

Directions:

Directions:

- 12 ounces pasta (such as rotini or penne)
- 4 ears fresh corn on the cob, husks and silks removed
- 1 red bell pepper, diced
- 1 jalapeno, seeded and finely chopped
- 1/2 cup red onion, finely diced
- 1/2 cup fresh cilantro, chopped
- 1 cup Cotija cheese, crumbled
- 1/4 cup olive oil
- Juice of 2 limes
- 2 garlic cloves, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Lime wedges and extra cilantro for garnishing (optional)

Directions:
1. Cook pasta according to the package instructions in a large pot of salted boiling water until al dente. Drain and rinse under cold water to stop the cooking process. Transfer to a large salad bowl.

2. While the pasta is cooking, grill the corn cobs on a medium-high heat grill, turning occasionally, until cooked and charred in spots, about 10 to 12 minutes. - 1/2 cup chicken broth
- 1 cup heavy cream
- 2 cups fresh spinach leaves, washed and roughly chopped
- 1 cup grated Parmesan cheese
- 1 tablespoon Italian seasoning
- 1 small onion, finely chopped
- 2 cloves garlic, minced

Directions:
1. Season chicken breasts with salt, pepper, garlic powder, and paprika on both sides.
2. Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook for 5-7 minutes on each side, or until they are golden brown and cooked through. Remove chicken from skillet and set aside.
3. In the same skillet, add chopped onion and sauté until translucent. Add minced garlic and sauté for another minute until fragrant.

- 1 teaspoon salt

- 1 cup beef broth or water
- 1 tablespoon tomato paste
- Shredded cheese, sour cream, and chopped green onions for serving (optional)

Directions:

BBQ Bacon Cheeseburger

Ingredients:
- 1 lb ground beef
- 4 slices of bacon
- 4 slices of cheddar cheese
- 4 hamburger buns
- 1/2 cup BBQ sauce
- Lettuce leaves
- 1 tomato, sliced
- 1 red onion, sliced
- Salt and black pepper to taste
- Optional toppings: pickles, mayonnaise, mustard

Directions:
1. Preheat your grill to medium-high heat.
2. In a bowl, season the ground beef with salt and pepper, then form into 4 evenly sized burger patties.
3. Place the bacon on the grill and cook until crisp, about 5-7 minutes, turning occasionally. Once cooked, move to a plate lined with paper towels to drain excess fat.
4. Grill the burger patties for about 3-4 minutes on one side. Flip the burgers and brush a generous amount of BBQ sauce over the cooked side.
5. Continue to grill the burgers for another 3-4 minutes for medium-rare to medium, or until they reach your desired level of doneness.

Ingredients:
- 1 1/2 pounds sirloin steak, cut into bite-sized cubes
- 1 tablespoon olive oil
- 2 tablespoons butter, divided
- 5 garlic cloves, minced
- 1 teaspoon fresh rosemary, chopped
- 1 teaspoon fresh thyme, chopped
- 1 teaspoon fresh parsley, chopped
- 1 pound baby potatoes, quartered
- Salt and pepper, to taste

Directions:
1. In a large skillet over medium-high heat, heat the olive oil. Add the potatoes to the skillet in a single layer and cook until golden brown and crisp, stirring occasionally. This will take about 10-15 minutes. Once the potatoes are crispy and tender, season them with salt and pepper to taste. Remove the potatoes from the skillet and set aside.

2. In the same skillet, increase heat to high and add the steak bites. Let them sear for a minute before stirring, then continue to cook while stirring occasionally until they are golden brown. Season with salt and pepper during cooking.

3. Push the steak to one side of the skillet and add the 1 tablespoon of butter to the empty side, letting it melt. Add the minced garlic to the melted butter and sauté it for a few seconds until fragrant.

Ingredients:
- 3 cups cooked, shredded chicken
- 2 cups crushed tortilla chips, plus more for topping
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (15-ounce) can corn, drained
- 1 (10-ounce) can diced tomatoes and green chilies (like Rotel), drained
- 2 cups shredded Mexican cheese blend, divided
- 1 cup sour cream
- 1 (1-ounce) packet taco seasoning
- 1/2 cup chopped fresh cilantro, optional
- 1/4 cup diced green onions, for garnish
- 1 avocado, diced for garnish

Directions:

Healthy No-Bake Peanut Butter Oat Brownie Bars

Ingredients:
- 1 cup natural peanut butter
- 2 cups rolled oats
- 1/2 cup honey or maple syrup
- 1/4 cup unsweetened cocoa powder
- 1/2 cup crushed walnuts (optional)
- 1 teaspoon vanilla extract
- Pinch of salt
- 1/2 cup dark chocolate chips

Directions:
1. Line an 8x8 inch baking pan with parchment paper or grease it lightly with cooking spray.
2. In a large mixing bowl, combine the peanut butter, honey or maple syrup, and vanilla extract. Mix until well combined.
3. Add the rolled oats, cocoa powder, crushed walnuts if using, and a pinch of salt to the wet mixture. Stir until all the ingredients are thoroughly mixed and the oats are coated evenly.
