Parmesan Crusted Chicken
3/4 cup Mayo
1 cup grated parmesan
1/4 cup shredded parmesan
2 tbls. Panko
Mix together in a medium bowl. Trim 4 chicken breasts, pat dry and place in pan that is lined with parchment paper. Coat the top of the chicken with a generous layer of the cheese mixture. Bake at 425 degrees for approximately 20 minutes or until chicken reaches 165 degrees in the thickest part. Cover with foil if it gets too brown.
