Kofta ka Salaan
For the meatballs / kofta:
2 pounds (1 kg) ground beef preferably 80/20
1 onion ground in food processor and drained
Chopped cilantro
2-3 tablespoons Fadwa Masala Keema Masala or alternative spices:
2 tbsp coriander powder
1.5 tbsp cumin powder
1 tsp turmeric
1.5 tsp black pepper
1.5 tsp ginger powder
1 tsp garlic powder
1.5 tsp garam masala
0.75 tsp cinnamon powder
0.5 tsp ground cloves
0.5 tsp ground cardamom

1 tsp salt or to taste
1/2 tsp red chili or to taste

For the salaan / curry:
Neutral oil
1 large onion sliced
2-3 tablespoons ginger garlic paste
2 tomatoes chopped
2-3 green chilies
1 heaping tablespoon tomato paste
1-2 tablespoons Keema masala
1/2 tsp to 1 tsp salt or to taste
1/2 tsp red chili or to taste
1/2 cup whisked yogurt left at room temp
Chopped cilantro to garnish

Chicken Karahi
1 whole bone in chicken cut into 12 pieces
1/2 cup neutral oil
4 tablespoons ginger garlic paste
1 tablespoon fresh ginger cut julienne
6-7 tomatoes sliced in half
1/2 bunch chopped cilantro
4 green chilies
1/2 stick butter

1.5 tsp salt or to taste
2 tsp hot red chili powder or to taste

4 tablespoons Fadwa Masala Karahi Masala
Or alternative spices:
2 tbsp coriander powder
2 tsp cumin powder
2 tsp garam masala
1.5 tsp black pepper
1.5 tsp ginger powder
1 tsp garlic powder
0.75 tsp turmeric

Instant Pot Keema Macaroni
1 lb ground beef
1 box (1 lb) macaroni pasta
Neutral oil
1 small onion or half a large onion chopped
1 tablespoon garlic paste or crushed fresh garlic
One 6 oz can tomato paste
1.5 tablespoon Fadwa Masala Keema Masala or
Alternative spices:
- 2 tsp ground coriander
- 1 tsp ground cumin
- 1/2 tsp turmeric
- 1/2 tsp black pepper
- 1 tsp garam masala

1.5 tsp salt
1/2 tsp red pepper flakes
1 cup mozzarella cheese or any kind you prefer
1/2 cup heavy cream
Chopped parsley or cilantro

Instant Pot pasta cook time: High Pressure Take the lowest box time, divide by 2, and subtract 2 minutes

White Chicken Korma
2 lbs chicken breast cut into cubes
Oil
1 large onion sliced
2 tablespoons ginger garlic paste
1 cup yogurt
2-3 green chilies
1 tablespoon garam masala
1 tablespoon coriander powder
1/2 tablespoon cumin powder
1/2 tsp black pepper
1/2 tsp white pepper
1/2 tsp turmeric
1/2 tsp red chili powder
1 tsp salt or to taste
1/2 cup heavy cream or half and half
Handful chopped cilantro

Instant Pot Chicken Tikka Masala
1.5 lbs chicken breast cut into cubes
Neutral oil
1 onion chopped
1 tablespoon garlic paste
1 tablespoon ginger paste
1 can tomato paste (about 4 tablespoons)
1-2 chopped green chilies
1 tablespoon garam masala I used Fadwa Masala
1 tablespoon coriander powder
1/2 tablespoon cumin powder
2 tsp Kashmiri red chili
1/2 tsp turmeric
1/2 tsp black pepper
1 tsp salt
1/2 cup heavy cream
Crushed kasoori methi and chopped cilantro to garnish

Chicken Over Rice
Chicken marinade:
1.5 lbs chicken tenderloins or breast
2 tablespoons ginger garlic paste
2 tablespoons yogurt
2 tablespoons melted butter
3 tablespoons Tandoori Masala
1 tsp salt
1 tsp hot red chili powder
Squeeze of lemon juice
1/4 tsp red food coloring (optional)

Alternative spices:
1/2 a masala packet from a different brand (do not add extra salt or chili if using a packet)
Or:
2 tbsp coriander powder
1.5 tsp cumin powder
1 tsp turmeric
1 tsp black pepper
1.5 tsp ginger powder
1 tsp garlic powder
1 tsp paprika
1 tsp garam masala
0.75 tsp cinnamon powder
0.5 tsp ground cloves
0.5 tsp ground cardamom
0.25 tsp nutmeg
Plus salt and red chili to taste, I did 1 tsp of each

Rice:
2 cups sela basmati rice I always use in the yellow bag
4 cups hot water
1 chicken bouillon cube
1.5 tsp turmeric
1-2 bay leaves

White sauce:
Equal parts mayo and sour cream, can sub yogurt for either part or add in addition. I did about 1 cup each
1/4 to 1/2 tsp salt (taste)
1/4 tsp black pepper
1 tsp dried dill
Water as needed

Basmati Rice
2 cups basmati rice (I use sela for the best texture) washed and drained
2 tablespoons butter
2 tablespoons oil
1 chicken bouillon cube
4 cups hot water
1/2 tsp salt

Some tips:
1. 🚿 Wash your rice extremely well, about 6-8 times until the water runs clear. This removes excess starch and prevents the rice from sticking together while cooking. This step is a non-negotiable
2. 🍚 Select the right type of rice. I always use sela because you simply cannot beat the texture. My favorite is in the yellow bag (not sponsored)
3. Fat 🧈 + Salt πŸ§‚ these two elements take rice from a bland to craveable. I always use butter in addition to oil, it gives the rice an amazing taste. The right amount of salt is critical. I find that one chicken bouillon cube which contains a lot of salt plus an extra half teaspoon is perfect for 2 cups of rice cooked in 4 cups of water
4. Get the water πŸ’§ ratio right. For sela rice, a perfect measured 1:2 rice to water ratio is what I find works best. If you use regular basmati (non-sela) 1 cups rice to 1.75 cups water is better as it requires less water.
5. ⏰ Set a timer. After bringing it up to a boil, add the lid, reduce to lowest setting and simmer for 20 minutes. Turn the flame off, and then allow the rice to rest for another 15 minutes before lifting the lid. This is critical to making sure your rice is not undercooked or worse, mushy.

Masoor Daal
2 cups masoor daal (split red lentils)
6 cups hot water
Neutral oil
1 onion diced
2 tablespoons garlic paste
2 tablespoons ginger paste
3 tomatoes diced
2-3 green chilies diced
Spices:
1 tablespoon Daal masala (substitute with 2 teaspoons turmeric and add an extra 1/2 tablespoon of garam masala)
1 tablespoon garam masala
1 tablespoon coriander powder
1/2 tablespoon cumin powder
1 tablespoon Kashmiri red chili powder
2 tsp salt or to taste
Chopped cilantro or kasoori methi and squeeze of lemon to finish

Beef Pulao
2.2lbs (1 kg) beef cut into cubes
4 cups sela basmati rice washed thoroughly and drained
7 cups water
1/2 cup vegetable oil
1 large onion sliced
2 tablespoons ginger garlic paste
3 green chilies
2.5 tsp salt
1/2 tsp red chili powder (optional)

3 tablespoons Pulao Masala or Alternative spices:
Coriander powder 2 tbsp
Cumin powder 1 tbsp
Black pepper 1Β½ tsp
Fennel powder 1Β½ tsp
Ginger powder 1 tsp
Garlic powder 1 tsp
Turmeric powder ΒΎ tsp
Cinnamon powder Β½ tsp
Clove powder ΒΌ tsp
Cardamom powder ΒΌ tsp
Nutmeg powder β…› tsp

You can also use 1 pulao masala packet, but do not add any extra salt
