Cajun shrimp alfredo for dinner tonight! So simple and so tasty.
1 # shrimp, peeled, deveined,tail off
1 green bell pepper, thinly sliced
1 red bell pepper, thinly sliced
1 sweet onion, sliced
3 cloves (or 1Tbsp minced) garlic
1-2Tbsp Cajun seasoning (depends on how spicy you want it)
2tsp Italian seasoning
2tsp olive oil
1 stick butter
1.5 c heavy cream
4 oz Parmesan cheese
1 # of your favorite noodles, cooked and drained
1. Sautee peppers and onion in the olive oil until onions are translucent and the peppers are soft. Remove from pan.
2. Toss shrimp in 1Tbsp of the Cajun seasoning. Add to the same pan the veggies were cooked on. Cook until pink and add to the vegetables. Leave the excess oil, and add the stick of butter and the cream.
3. Cook, stirring often, until the butter is melted and the cream and butter are combined. Add in garlic, Italian and rest of Cajun (if you want more spice) stir for another 1-2 minutes.
4. Stir in Parmesan. Continue to stir until cheese is melted and sauce thickens.
5. Add in pasta, plate and enjoy!
