Stuffed Peppers Recipe
Stuffed peppers with ground beef and rice are topped with a seasoned tomato sauce.

Ingredients:

1 cup cold water
½ cup uncooked long grain white rice
1 tablespoon vegetable oil
1 pound ground beef
6 medium green bell peppers
16 ounces tomato sauce, divided
1 tablespoon Worcestershire sauce
¼ teaspoon garlic powder
¼ teaspoon onion powder
salt and ground black pepper to taste
1 teaspoon Italian seasoning

Directions:

Gather all ingredients, and preheat the oven to 350 degrees F (175 degrees C).
Bring water and rice to a boil in a covered saucepan. Reduce heat to low and simmer until rice is tender, about 20 minutes.
Meanwhile, heat oil in a skillet over medium heat. Add ground beef and cook until evenly browned and crumbly, 7 to 9 minutes.
Hollow out bell peppers by removing and discarding the tops, seeds, and membranes. Slice the bottoms of the peppers if necessary to make sure they stand up straight.
Arrange peppers in a baking dish with the hollowed sides facing upward.
Prepare filling by mixing cooked beef, cooked rice, 1/2 of the tomato sauce, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Spoon an equal amount of filling into each hollowed pepper.
Mix remaining tomato sauce and Italian seasoning in a bowl, and pour over the stuffed peppers.
Bake in the preheated oven, basting with sauce every 15 minutes, until peppers are tender, about 1 hour.
Serve hot and enjoy!

Magnificent Macaroni Salad Recipe

This recipe for macaroni salad with egg is a slightly sweet, classic macaroni salad.

Ingredients:

3 cups elbow macaroni
1 ½ cups mayonnaise
⅓ large onion, minced
¼ cup chopped fresh parsley
2 tablespoons prepared yellow mustard
2 teaspoons rice vinegar
1 teaspoon white sugar, or more to taste
¾ teaspoon celery seed
½ teaspoon salt
3 hard-cooked eggs, chopped

Directions:

1 - Bring a large pot of lightly salted water to a boil. Cook macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, about 8 minutes. Drain.
2 - Rinse macaroni in cold water until cool; drain.
3 - Stir mayonnaise, onion, parsley, mustard, rice vinegar, sugar, celery seed, and salt together in a bowl. Add macaroni and eggs and stir to coat.
4 - Chill in the refrigerator for 30 minutes before serving.

Easy Mexican Street Corn 😍
this street corn is super easy to make is the perfect side dish that everyone will enjoy!
INGREDIENTS:
4 ears of corn
¼ cup of Crema Mexican Agria Sour Cream (regular sour cream will work as well)
¼ cup of mayonnaise
½ cup of Cotija cheese, crumbled
2 cloves of garlic, crushed (or finely minced)
¼ teaspoon of fine sea salt
Juice and zest of 1 lime
1/4 cup of Cilantro, finely chopped
½ teaspoon of chipotle chili powder
INSTRUCTIONS:
Heat your grill to roughly 400 degrees F.
You can grill the corn with the husks on or off. I took the husks off to ensure that I got some nice grill marks on the corn and because I feel like it gives it a nice grilled flavor. FOR HUSKS ON: let your corn soak in water for 10 minutes before grilling. FOR HUSKS OFF: lightly spray spray each cob with cooking spray.**
Place the corn on the grill and grill for roughly 12 minutes, turning the cobs 1/4 turn every 3 minutes.
Mix the topping sauce by stirring together the Cacique® Crema Mexican Agria Sour Cream, mayonnaise, cotija cheese, garlic, lime zest and juice, and cilantro.
Generously top each corn cob with the cheese mixture, sprinkle with a bit of chipotle chili powder, and top with a bit of extra cotija cheese and cilantro.

This Waldorf salad recipe is delicious, and you can vary the ingredients to your preference. Try adding diced, roasted chicken to make this salad a meal!
INGREDIENTS:
½ cup mayonnaise
1 tablespoon white sugar
1 teaspoon lemon juice
⅛ teaspoon salt
3 apples -- peeled, cored, and chopped
1 cup thinly sliced celery
½ cup chopped walnuts
½ cup raisins (Optional)
DIRECTIONS:
Step 1Whisk together mayonnaise, sugar, lemon juice, and salt in a serving bowl.
Step 2Stir in apples, celery, walnuts, and raisins. Cover and chill in the refrigerator until ready to serve.
NUTRITION FACTS:
Per Serving: 279 calories; protein 2.3g; carbohydrates 23.8g; fat 21.1g; cholesterol 7mg; sodium 170.8mg.
