Nashville Hot Jack Patties

Ingredients:

1 box of Jack & Annie’s Buffalo Jack Patties 1 cup of flour
1 TBS seasoning salt
2 TBS vegan plant- based egg substitute
1 tsp hot sauce
1 tbs pickle brine
1 tsp cayenne pepper
1 tsp garlic powder
1 tsp brown sugar
1 tsp paprika
1 tsp chili powder
1 tsp salt
A pinch of cinnamon
Frying oil
Dill pickle slices
Thickly sliced white bread

Directions:

To begin, microwave 4 buffalo jack patties for 1 minute, to thaw slightly. In a shallow dish, mix together the flour and seasoning salt. Pour the egg substitute into another shallow dish and whisk in the hot sauce and pickle brine. Bread each jack patty by dipping them first into the egg mixture and then into the flour mixture. Do this 3x, until well breaded. Let each patty rest on a cooling rack. While the patties are resting, add enough frying oil to a large skillet that it will cover the patties. Once the oil reaches 350 degrees F, slowly lower each patty into the oil. Fry for 4 - 5 minutes on each side, until golden brown. Return each patty to the cooling rack to drain. In a smaller skillet over low heat, add 1/2 cup of the used frying oil and mix with the cayenne, garlic powder, brown sugar, paprika, chili powder, salt, and cinnamon. Stir until well combined and turn off the heat. Dunk each patty into the spicy oil mixture and serve with thickly sliced white bread and plenty of dill pickle slices. Enjoy!

Cookies:
1 stick of salted butter
1/2 cup light brown sugar
1/4 cup white sugar
1 egg
1 tsp vanilla extract
1/4 tsp almond extract
1/2 tsp baking soda
1/2 tsp cornstarch
1/4 tsp salt
3/4 cup AP flour
3/4 cup bread flour
Cinnamon Sugar Layer:

Combine one stick of butter, cut into small cubes, with brown sugar and white sugar. Cream for 5 minutes. Add the egg, vanilla, and almond extracts and mix until combined. Add baking soda, cornstarch, salt, and flour and mix until just incorporated. Set aside. In a medium bowl, mix together the ingredients for the cinnamon sugar layer. In a large bowl, mix together the ingredients for the streusel layer, using a fork to create crumbs. Place bowl in freezer. Pat 1/2 the cookie dough into a rectangle shape and sprinkle on the cinnamon sugar. Pat the remainder of the cookie dough on top so that the cinnamon sugar layer is sandwiched in the dough. Wrap the dough in plastic wrap and freeze for 30 minutes. Preheat oven to 400 degrees. Take dough and streusel out of freezer. Cut dough into 8 pieces, roll into balls, and top generously with crumbs of streusel. Place on an un-greased cookie sheet and bake for 11 - 13 minutes, until just brown on the edges. Cool and enjoy!

Today I’m making a recipe that I recently authored for . This Cosmic Crisp® Apple and Blue Cheese Grilled Cheese Panzanella would be delicious eaten alone or along side a pork roast for dinner. Cosmic Crisp apples work best for this recipe because they are slow to brown, making them perfect for salads. Enjoy!

Ingredients:
1 Cosmic Crisp Apple
1/4 of a red onion, sliced thin
4 slices of bread
4 slices of havarti cheese
1/4 cup of blue cheese crumbles
2 TBS butter
1/2 of a lemon
6 TBS olive oil
1 TBS honey
Parsley to garnish
Salt
Pepper

1. Preheat oven to 400℉. Prepare each of the two grilled cheese sandwiches by placing two slices of havarti cheese and 1/2 the blue cheese crumbles between two slices of bread. Spread each side of the sandwiches with butter and place them on a cookie sheet. Bake for 5 minutes per side, or until brown.
2. While the sandwiches bake, core one Cosmic Crisp® apple and slice thinly. Also slice thinly 1/4 of a small red onion. Set both aside.
3. To prepare the dressing, add the olive oil, juice of half a lemon and honey to a bowl. Salt and pepper to taste and whisk together.
4. Once the sandwiches have finished baking, cut each one into 8 squares and place into a large glass bowl. Add the Cosmic Crisp® apples, red onion and dressing to the bowl, toss gently. Garnish with additional blue cheese crumbles chopped parsley or apple slices and enjoy!
