(Ingredients:
1 jar dill pickle chips, drained
1/2 cup all-purpose flour
2 large eggs
1 tbsp water
1 cup panko breadcrumbs
1/2 cup plain breadcrumbs
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp paprika
1/4 tsp black pepper
1/4 tsp salt
Cooking spray
Ranch or spicy mayo, for dipping
Directions:
Drain the pickle chips well and pat them very dry with paper towels. This step matters, because wet pickles ruin the coating.
Set up 3 bowls: one with flour, one with eggs and water whisked together, and one with panko, plain breadcrumbs, garlic powder, onion powder, paprika, black pepper, and salt mixed together.
Dip each pickle chip into the flour, then the egg mixture, then the breadcrumb mixture, pressing lightly so the coating sticks well.
Place the coated pickles on a plate or tray in a single layer.
Preheat the air fryer to 200°C / 400°F for 3 minutes.
Lightly spray both sides of the pickles with cooking spray.
Arrange the pickles in the air fryer basket in a single layer without overlapping. Cook in batches if needed.
Air fry for 7–9 minutes, flipping halfway through, until golden and crisp.
Serve immediately with ranch or spicy mayo.

Dry the pickles really well or the breading will slide off and the result will be trash. Use panko because regular breadcrumbs alone won’t give enough crunch. Don’t crowd the air fryer basket or they steam instead of crisp. Spray the coating lightly with oil or you’ll get pale, dry crumbs instead of golden crispy pickles. Eat them fast, because once they sit, they lose the crunch and become mediocre. If you want stronger flavor, add a little cayenne or grated Parmesan to the breadcrumb mix.
