Since 2008, we’ve shared, original, carefully tested recipes designed for home cooks who value bold flavor, thoughtful technique, and reliable results. Our approach to cooking centers on what we call “simple but special” meals - dishes refined enough for to serve to company, but practical enough for everyday cooking. From elevated weeknight dinners to relaxed entertaining and globally inspired flavors, our goal is simple: help you cook meals that feel special without making the process complicated. Recipes are developed and tested in our home kitchens and photographed in real conditions so they reflect what home cooks can expect when preparing them themselves. Apples and onions are a natural pairing, especially when served with pork or chicken. As they cook, the onions mellow and provide a subtly sweet complement for tart apples. Butter adds richness, and a splash of apple c***r brings the flavors together.

For this version, we start the red onions first, giving them time to soften and brown around the edges before adding the apples. Cutting the apples into small pieces helps them cook quickly and makes the finished mixture easy to spoon over chicken, pork chops, or other main dishes.

Sheet pan dinners have earned a permanent place in our weeknight rotation, but the best ones aren’t simply a matter of putting everything in the oven at once. This salmon dinner works because the components are added in stages: the potatoes start cooking first so they turn out tender and develop a little caramelization, the green beans are added midway through, and the salmon goes on last to keep it moist and just cooked through.

The brown sugar coating gives the salmon a subtle sweet-savory finish and caramelizes quickly in the high heat of the oven. Paired with simple roasted potatoes and crisp-tender green beans, it’s an easy weeknight salmon dinner that keeps cleanup to a minimum. The staged roasting makes for easy preparation while ensuring each ingredient is cooked to perfection.

Known as soutzoukakia in Greece, these meatballs in tomato sauce have a distinctive flavor that leans into warm spices, especially cumin, rather than the garlic and basil profile of Italian versions. Simmering them in a light tomato sauce spiced with a hint of cinnamon deepens their flavor and brings the dish together beautifully.

Because you can work on several steps at a time, our Greek meatballs recipe comes together in about an hour and only needs a crisp side salad to round out a satisfying meal. It’s a great way to bring Mediterranean flavor to your table with just a few pantry spices and simple ingredients.

This shrimp and zucchini pasta keeps the focus on fresh ingredients instead of a heavy sauce. Tender shrimp, zucchini, sweet bell pepper, garlic, and onion are quickly sautéed, then tossed with pasta and just enough chicken broth to create a light, garlicky sauce that brings everything together. The simple step of salting the zucchini before cooking ensures tender, not mushy texture.

This recipe began as an adaptation of a back-of-the-box dinner that relied on a packet of Italian dressing mix for the sauce. After a few rounds of testing, we replaced it with simple pantry ingredients that deliver a fresher, more balanced flavor and let the shrimp and vegetables take center stage. The result is a colorful, one-dish pasta dinner that’s quick and easy enough for a weeknight.

This Pasta alla Norma recipe highlights the flavors of Sicily with oven-roasted eggplant, a fragrant tomato and garlic sauce, and fresh basil. Topped with ricotta salata, it’s a lighter, flavor-forward version of the Italian classic that comes together in under an hour.

With its roots in Sicily, Pasta alla Norma is a true celebration of bold Mediterranean flavors. A combination of caramelized eggplant, garlicky tomato sauce, fragrant basil, and a sprinkling of ricotta salata, it’s a delicious example of simple Southern Italian cuisine.

Pasta with bacon and onion gets plenty of savory flavor from garlic and fresh thyme, with chicken broth and a touch of cream making a light, silky sauce to coat the noodles.

Bacon and onion are a natural starting point for pasta, but fresh thyme is what gives this version its distinctive flavor profile. Its herbal flavor cuts through the richness of the bacon and complements the sweetness that develops as the red onion softens.

Chicken broth loosens the browned bits from the skillet and gives the sauce enough body to coat the pasta. The cream goes in only at the end, so the finished dish stays savory and balanced without turning into a heavy cream sauce.

These Thai fish cakes are a blend of mild white fish, red curry paste, fresh herbs, green beans, and makrut lime leaves, pan-fried and paired with a sweet-tangy cucumber dipping sauce.

Thai fish cakes are a popular appetizer on restaurant menus: crisp and golden on the outside and full of savory curry, fresh herbs, and lime. The cucumber dipping sauce is nearly as important as the fish cakes themselves. It cuts through their richness and gives the dish a cool, sweet-tangy contrast that pulls everything together.

Tender chicken breasts are stuffed with Gruyere cheese, rolled in seasoned breadcrumbs, and pan-fried until golden before finishing in the oven. The result is crisp on the outside with a rich, melted cheese filling.

For this dish, we fill thinly pounded chicken breasts with grated Gruyere, roll them up, and coat them in breadcrumbs seasoned with a little nutmeg. The cheese melts as the chicken cooks, creating a creamy filling that complements the crisp exterior.

This easy one-pan dinner combines seared pork tenderloin medallions with apple, bacon, butternut squash, and a light maple-thyme glaze. It's a quick, fall-inspired meal that delivers a perfect balance of savory and subtly sweet flavors.

Pork medallions are simmered with apples and butternut squash, then finished with crisp bacon, a drizzle of maple syrup, and fresh thyme to bring all the flavors together. Each ingredient adds its own layer of flavor, creating a balanced dish that’s easy enough for a weeknight yet hearty enough for Sunday dinner with the family.

Not all pumpkin pasta recipes are created equal, and if you’ve ever had one that tasted flat or overly sweet, you’re not alone. Pumpkin purée doesn’t offer much flavor on its own, so the key to a great pumpkin pasta sauce is building depth with complementary ingredients. In this case, we added just a pinch of nutmeg to enhance the pumpkin’s natural sweetness while balancing it with savory notes from crispy pancetta, buttery pine nuts, and fresh sage.

This recipe also uses fresh fettuccine, which feels elegant but still cooks quickly and soaks up the creamy sauce beautifully. That said, the rich, cozy flavor of this pumpkin pasta pairs well with just about any pasta shape you have on hand.
