Caramel candy apple
2 Oz bourbon
Juice of 1/2 lemon
1oz maple syrup
1 tbs caramel

Mix all in bottom of 18 Oz solo cup. Fill half with ice. Half and half with apple juice and ginger beer.... Garnish with bacon crack

Thanksgiving tamales

The turkey:
While a smoked turkey would be best, roasted or deep fried would also work. I personally dont include the skin as it doesn't work well. Anyway ya do it. Pick the meat from its bones and shred it. Make the marinade.

1 can of jellied cranberry sauce
2 large cans of adobo peppers( do not drain)
Enough chicken broth to make smooth in a blender
You can add any peppers ya want to add to the heat of this, but this is the basic blend. Place meat in a bowl, add the marinade and mix thoroughly. Place in large zip lock and let sit in the fridge for 24 hours.

The masa
4 cups masa flour
3 cups warm chicken broth
2 cups melted lard( I've done this with shortening and they come out greasy. Use lard, your not making these for vegans)
2 tbs baking powder
Now the spices!
2tbs thyme
2 tbs sage
2 tbs garlic powder( I prefer granulated garlic over powdered)
2 tbs onion powder
2 tbs black pepper( if you grind your own I recommend Vietnamese black pepper as it adds a different spice layer)
1 tbs savory
1 tbs herbs de Provence
1 tbs marjoram
1 tbs cumin

Add all the dry together, mix with a whisk. Make sure that you have the broth and the lard warm to the point of hot. Pour in and mix with a large spoon throughly. Let sit for at least thirty minutes. This let's the flavors marry. Taste the masa add salt as needed. The masa should taste like a stuffing. Then just make the tamales. If you need instruction on that then there are many videos on the internet to show you..... Until I get a camera and start doing my own channel.

Poison apple

2oz vanilla vodka
1oz spiced rum
1oz butterscotch schnapps
Juice of half a lemon
1/2 Oz salted caramel syrup
Apple Cider
Ginger beer

Add first 5 ingredients to a shaker filled with ice. Shake well and pour into an 18oz solo cup. Fill remaining with equal amounts of cider and ginger beer. Stir and enjoy.

Cooking tip...
Order some msg. Any will work, the one I use is a corn extract, but there are many on Amazon. Mix 2/3 regular salt( not iodine there's no reason to hate your life like that.) I prefer Japanese seaweed salt or just kosher flake. Mix that with 1/3 of the msg. Massive gave changer to flavor profile.

So I'm on a Thomas Keller kick currently and will be working my way thru his cookbooks. This is the chicken brine from his ad hoc at home cookbook. I've tried it prior and the lemon flavor that infuses is wonderful. This is enough for 10 lbs

Thomas Keller chicken brine
5 lemons, cut in half and juiced into pot
12 bay leaves
1 bunch flat leaf parsley, chopped rough
1 bunch of thyme
1/2 cup honey
1 entire head of garlic, halved thru the equator
1/4 cup black peppercorns
2 cups kosher salt
2 gallons of water

Combine all in a large pot and bring to a boil, boil for at least a minute while stirring to dissolve the salt. Remove from heat and let cool. Chill before adding chicken and let chicken marinate for at least 13 hours.

In the remainder
1/3 ginger beer
The rest Pinapple juice

Stir and enjoy

Alternative
1/3 sparkling lemonade
The rest sprite or 7up

Either way is delicious

Blackberry lemonade

18oz solocup
4oz blackberry crown royal
2oz chambord
Lemonade( I prefer the heb brand sparkling or the Aldi brand)

Fill the cup 3/4 with ice, add liqour and then fill remaining g with lemonade. Stir and enjoy

Peach smash
For 2 drinks

1 whole peach, peeled and sliced
Juice from 1 lemon
A couple of sprigs of fresh mint
4oz of bourbon
2oz simple syrup
1 gingerbeer

Place peach slices, lemon juice, and mint in shaker. Muddle well, then add bourbon and simple syrup. Shake without ice.
Fill two solo cups 3/4 full of ice. Strain into cups and then top with ginger beer. Light stir to mix and enjoy. Can be garnished with a peach slice and a mint sprig if you're feeling fancy.

This is the best drink of the summer so far.

Laughing Rabbit Pepper Margarita

For two
In shaker
Muddle a jalapeño, 1 Thai chili, and three leaves of fresh mint.
Add
4 oz Blanco tequila
2 Oz mescal
3 oz orange liqour ( I prefer citronge, better flavor and price point)
2 Oz simple syrup ( 1 cup water, 1 cup sugar in a pan and heated until sugar incorporates)
4 oz orange juice.

Fill the shaker with ice and shake the s**t out of it.

Fill two solo cups 3/4 full of ice and split between the two.... Top with 7up..

Salt mix
3 tbs tajin
2 tbs brown sugar
1 tbs chilpote

Mix well and sprinkle on top of margarita

Pear martini

Recipe for two

3oz vanilla vodka
1oz elderflower liqour
1oz pear liquor
2oz lemon juice (fresh squeezed)
2oz simple syrup ( I use the lemon /lime syrup from the margarita recipe)

Rim mix
2 tbs sugar in the raw
1 tsp cinnamon
1 tsp pumpkin pie spice
Mix with fingers on a small plate

Rim glasses with lemon juice and roll in rim mix.

Place all ingredients in shaker with 2 handfuls of ice. Shake for 20 seconds and split between the two glasses, or one really large one after a bad shift prior to crying in the shower. Enjoy, or not.

Laughing Rabbit Margaritas

It starts with the sweet and sour syrup
4 bags of limes
2 bags of seedless lemons
2cups of honey
2cups of agave nectar
4 cups of water

Squeeze the limes and lemons until you have 4cups of lime juice and 2 cups of lemon juice. It's basically all the bags. A good hand squuezer and a big bowl come in handy during this process. Add the honey and nectar with the water in a large pot and heat until everything is disolved but not to boiling. Let cool and add in all the juice and stir. Pour into quart jars, makes about 5 quarts.

For the drink
Get two twelve once glasses and salt the rims( I prefer tajin mixed with raw sugar). Once salted, fill glasses with ice.

Drink mix
4 shots of tequila Blanco
2 shots mezcal
2 shots Cointreau
Place in a shaker with ice, shake well and split between both glasses and finish filling with simple syrup

I usually float a shot of anjo as well and stir.

BBQ poppers

These can be made with any smoked meat. Here at laughing rabbit we only fire up the smoker when we can fill it so we always have smoked meats in vacuum pacs ready to go for any recipe. I rarely use measurements when making these so it's a general guideline.... Like most recipes are.

1lbs of smoked meat
( pulled pork, ribs, or brisket hold more of a mouth feel than chicken and if using chicken you will want a little more sauce than the others)
1/2lbs of cheese shredded (chedder is my goto but playing with the mix is half the fun. Also, get a block and shred it yourself as bagged shred has flour and additives you don't want)
2 blocks of cream cheese, room temp
A BBQ sauce of your preference, I mainly use stubbs
15 or so jalapeños
2 tbs fajita seasoning
2tbs garlic powder
2tbs black pepper
1tbs salt
2 pack of cheap bacon, 12 oz is about 15 slices

Heat oven to 425. Place cheese, cream cheese, 1/4 to 1/2 cup of barbque sauce, and dry spices in large bowl and using your hands ( gloves are very helpful here) mix ingredients thoroughly. You want to use enough bbq sauce that the mix is moist but not sopping wet. Chop the meat and mix in. You'll have a fine mix when your done depending on how course you chopped the meat, I prefer fine. Take the jalapeños and cut jaut the stem part away, cut in half. When deseeding, cut across the top leaving a part of the pith so that the filling won't flow out and remove the rest of the seeds and pith.
A note on bacon. Thin is your friend here. I usually buy the hill country brand for these as it's cheap and thin, but basicly the cheap bacon in a box is the ones ya want.
Fill jalapeño with enough mix to fill and be mounded up, I usually pull up 3finger tips and use that. Wrap with a piece of bacon from top to bottom. Place on baking sheet. Do yourself a favor and spray with Pam first or parchment paper if your fancy, I ain't fancy. Once all are wrapped place in oven on middle rack for 20 minutes. At 20 min pull out and brush with bbq sauce that was previously used. Place back in oven for another 20 min. Enjoy.
