There are lots of side dishes on the Thanksgiving Day table. To continue my series on Thanksgiving side dishes, this one is my favorite. You can bring them to other's homes for a potluck or make them as a side for your home dinner. This easy roasted vegetable recipe can be made anytime. My mother gave me this recipe years ago, and I have been making it since.

Easy Roasted Vegetables Recipe Your Family Will Love Ingredients:

2 Potatoes 1/2 Butternut 2 Sweet Potatoes or Yams 5 Carrots 1 medium Onion 8 Tbsp of Olive Oil 1 -2 Tbsp Parsley (dried) Salt / Pepper 1 tsp Granulated Garlic

Easy Roasted Vegetables Recipe Your Family Will Love Instructions:

Preheat the oven to 400 degrees.

Peel and cut butternut, potatoes, yams, carrots, and 1 onion.

Place in a large bowl and add olive oil, parsley, salt, pepper (to taste), and granulated garlic. Mix well.



Place on a cookie sheet and bake in the oven for 40-50 minutes. Turn them over halfway through the cooking process.

The trick to keeping weeknight meals healthy is keeping it simple. This recipe is an example of a simple recipe I am talking about. Chicken breast cooks up in a skillet in less than 30 minutes. Lemon and Rosemary Chicken Breast Recipe Ingredients:

4 pieces fo chicken breast3 Tbsp fresh rosemary minced1 squeezed lemon4 heads of garlic minced3 Tbsp coconut oil1/4 cup of chicken bone broth1 Tbsp of butter

Lemon and Rosemary Chicken Breast Recipe Instructions:

In a bowl, add the minced rosemary, lemon, minced garlic, and 2 Tbsp of coconut oil mixed with chicken breast.

Add 1 tbsp of coconut oil to a large skillet. Large enough to hold the chicken breast. Cook for 5-7 minutes. Turn over the chicken.

Add 1/4 cup of chicken bone broth to the skillet. Then, cover. It should fill the bottom of the skillet. Cover the skillet 25 minutes or less.

Remove the lid and 1 TBSP of butter to thicken the sauce.

If it seems like it is not cooked. slice it into 1/2 inch slices and cook for a few minutes in the sauce.

Slow cookers for every season. I find that it makes my life a lot easier when I have a meal cooking all day. And when I finished working, the meal was ready to serve. It makes busy weeknights a joy to cook. This Chicken tortilla soup recipe was inspired by a restaurant I visited recently. The richness of the sauce and the chunkiness of the content made me want to make it the very next day. This is my version of the recipe, and I hope it inspires you to make it as well. Please feel free to try it and share it with your family and friends.

What ingredients are in Chicken Tortilla Soup Recipe?

2 chicken breast - uncooked1 tbsp cumin + 1 tbsp of cumin on top of veggies1 tsp granulated onionSalt and pepper1 cup Green, red, and yellow mixed frozen peppersOne can diced tomatoes1 cup frozen cornOne can of black beans1 container 3 cups of bone broth or chicken broth

Note: You can easily double this recipe for a larger group or large family.

How do I make a Chicken Tortilla Soup Recipe?

Spray the slow cooker with nonstick cooking spray.

Add the chicken breasts to the slow cooker, then add cumin 1 tablespoon to coat the chicken. Turn the chicken over and coat both sides with cumin.

Add granulated onion flakes to the chicken to coat both sides as well.

Mix to coat and add extra seasoning if needed.

Add frozen peppers, frozen corn, black beans, and diced tomatoes.

Add more cumin to the veggies.

Then, add 1 container of bone broth or chicken broth.

Stir the mixture.

Cook on low for 6 hours or until chicken is really tender and starts to shred.

Using two forks, shred the chicken in the soup.

Serve immediately.

Recently, I have enjoyed one-skillet recipes. They save time on my weeknight meals and are super easy to make. This one also has the added advantage of being a keto-friendly recipe. Less stuff to clean after dinner is always a plus for a healthy weeknight meal.

Keto Style Ground Beef and Mushroom One Skillet Recipe Ingredients:

2 TBSP salted butter1 onion choppedOne package of sliced mushrooms, cut in half1 TBSP ThymeOne LB ground beef (organic)1 package of baby Kale / Spinach1/2 cups shredding mozzarellaSalt and Pepper to taste

Keto Style Ground Beef and Mushroom One Skillet Recipe Instructions:

First, in a hot skillet, add butter and chopped onions. Cook until translucent. Approximately 5-7 minutes, depending on the size of the chopped onion pieces. Lower the temperature if the onion starts to brown too much.

Then, cut the sliced mushrooms in half if they are large. Add them to the onions in the skillet.

Now, add half of the dried thyme. Toss and cook for 5 minutes or so until the liquid starts to reduce.

Then, push the mushrooms and onions to the side of the skillet. Then, add the ground beef in the center. Add the other half of the dried thyme. Break down the meat with a wooden spoon. Cook the ground beef until it is completely brown.

Now, mix them with the mushrooms and ground beef.

Then, toss the baby kale and spinach on top of the ground beef-mushroom mixture. Add a little salt and pepper. Cover with a lid and cook until wilted, about 5 minutes.

Next, remove the lid and toss with a wooden spoon.

Now, Add the shredded mozzarella to the top.

Serve warm and enjoy.

When peaches are in season, I always stick to one type of dish. That dish involves me grilling the peaches. So, I wanted to change it up a bit and try a different peach salad recipe like the idea of colorful salads. They are just so much more satisfying to the eye as well as the tummy. And, since I had some ripe peaches, I figured I would add even more color to the dish. Check out how I created this Corn Tomato and Peach Salad. It is a very colorful side salad recipe for my family. A perfect side dish for any grilling recipe like this Grilled Rosemary Garlic and Lemon Chicken recipe.

What ingredients are in the Corn, Tomato and Peach Salad Recipe?

6 plum tomatoes wedged - made into bite-size pieces1 cup corn fresh or frozen - Defrost corn first1/2 cup of Mozzarella pearls or more if you want1 large peach - slice and then cube up pieces

Dressing:1/3 cup olive oil1 tbsp honey1 tbsp aged balsamic vinegarsalt and pepper to taste

How to make this Corn, Tomato and Peach Salad Recipe?

Cook the corn, then cut off and place the kernels in a bowl. Set aside. If you only have frozen corn, defrost it in a bowl before making this dish. Then remove any excess liquid.

Cut the plum tomatoes into wedges then in half and remove the top near the stem. Add to the bowl.

Drain the mozzarella pearls and add to bowl with the tomatoes.

Add the corn to the bowl.

Remove the pit of the peach and dice into small pieces and add to bowl.

To make the dressing: Add the olive oil, honey, aged balsamic, and salt and pepper to taste. It should be a little sweet.

Add the rest of the ingredients to a bowl and pour the dressing on top and toss. Set aside and refrigerate for 1/2 hour.

While prepping for Christmas Eve, I realized I didn't have a centerpiece for the table. Every holiday, I love making a centerpiece because I don't want to spend a significant amount of money on buying one already put together and because it's a fun searching and finding items in my home and on clearance to create a beautiful holiday centerpiece. Here is what I did for Thanksgiving.

For this centerpiece, I used fresh flowers and a real pumpkin with double stick tape, ribbon, decorative paper, and floral foam. It was the first time I used floral foam, and it was easier to arrange the flowers in the pumpkin. I purchased ribbon from the craft store and found the printable online and printed it on silk paper a client of mine gave to me. It took about 15 minutes to put together, and everyone loved it.

Getting back on topic, I wanted to create a craft for the center of my table that was straightforward and elegant but didn't cost a significant amount of money.

Easy DIY Interchangeable Holiday Centerpieces

While at the craft store, I saw so many different items that I wanted to use for my centerpiece it was hard to decide. It occurred to me that there were two holidays so close together that I should be flexible in my design so I could change it easily.

Tip: If you want to do craft projects, go to the craft store a few weeks before the holiday. All the items will be at a deep discount. Each item I purchased was at least 50% off. Freezing fresh herbs is a great way to preserve your herb garden through the winter months. I am going to show you three ways I did just that using herbs from my garden. And, boy, am I glad I did. The fresh herbs in olive oil are fantastic with any meat or vegetable you want to add to it. I created three versions of herb bomb to enjoy during the cold weather.

What inspired me to do these Herb Bomb Recipes?

I switched to a Smart Orbit garden watering system this year (see previous post) and found that my herbs lasted significantly longer than usual and grew twice as large. So, I ended up with an abundance of herbs this year and didn't want them to go to waste, so I decided to create herb bombs to use up a lot of them and preserve them for next year.

While researching herb bomb recipes, I found that many people did not include a variation of these herbs in one frozen herb bomb. So, I decided to mix things up and share herb-boosted recipes that enhance flavor without adding new ingredients. Follow along and explore the various recipes. Enjoy!

Tools to use to make herb bomb recipes.

Let's first talk about the tools you will need to make these recipes. Below are the things I used to make these Herb Bomb recipes easy and quick. The longest time it took was to freeze them. =)

A chef's knife, being sharp and sturdy, will help chop these herbs finely.

Cutting board - Have a good-quality one.

Ice cube trays with silicone bottoms make it easier to pop the bombs out after they are frozen.

Freezer quart or gallon bag - After the bombs are frozen, I toss them into a freezer bag and label it for easy access when I need them.
