If you are looking for a comforting recipe that you can easily make with an Instant Pot, this Instant Pot Chicken Recipe with tomatoes and rice is just the thing. This recipe is made with whole-grain brown rice to increase the fiber in our diets. The Instant Pot does well with whole-grain brown short-grain rice. It makes the rice tender and enjoyable in a short amount of time. Follow along and make this recipe tonight for dinner.

What inspired me to make this dish?

My mother was a fan of chicken with tomatoes and rice when I was growing up. It's a great option if we stay away from pasta.

Ingredients in this Instant Pot Chicken Recipe

How to make this Instant Pot Chicken Recipe?

Follow the instructions below to make this easy Instant Pot recipe.

First, heat the Instant Pot on sauté. When ready, add olive oil, then chopped onion. Cook for two minutes.

Add chicken breasts, granulated garlic, basil, and parsley, and cook for an additional three minutes.

Pour in two cans of crushed tomatoes. Add the rest of the ingredients - brown rice short grain, broth, salt, and pepper.

Press the pressurize button on the Instant Pot, turn it to high, and sealed for 25 minutes. After the Instant Pot decompresses, pull the chicken out, shred it, and return it to the Instant Pot. Then, mix well. Serve warm.

TIP: Do not mix the ingredient together.

When I was growing up, our favorite place to go with my dad was Jim's Steaks on South Street in Philadelphia, PA. They had the best cheesesteaks. So whenever I pass through the city coming back from visiting my mother-in-law, I think of Jim's cheesesteaks. The other day I was home thinking about what I wanted to eat. I had pizza dough out waiting to be cooked. And, while looking at it, I thought of a cheesesteak. Yummy, cheesy cheesesteak. So, I decided I was going to make a cheesesteak pizza. With only the ingredients I had in my home, I rolled out the pizza dough and started. Here's the recipe I used.

Ingredients:

1 ball of pizza dough5 oz of chip sirloin steak (thinly cut steak)1 cup of tomato sauce2 cups of shredded mozzarella1 tsp of garlic /salt season(your favorite brand)1 tsp of oregano (dried)1/4 cup of sweet peppers (I used Whole Sweet Piquante Peppers)A small amount of cornmeal to help the pizza not stick to the stone or cookie sheet

Instructions:

Preheat oven to 425 degrees.

First, season the meat with a sprinkle of garlic salt. Then, cook the chip sirloin steak in a cast iron skillet. Using the tip of the spatula, scrape apart the meat to help cook quickly until 95% cooked.

Then, transfer to a plate lined with paper towels. Dry the meat and remove any excess fat. Then, cut into bite-size pieces to help spread as a topping. Set aside.

Roll out the dough on a floured surface.

Now, add a sprinkle of cornmeal to the pizza stone or cookie sheet. This will help prevent sticking. Transfer the rolled-out pizza to the cornmeal stone or cookie sheet.

Customize the jar tomato sauce.

To give the jarred tomato sauce more flavor, mix in the garlic salt seasoning and the oregano.

Then using a large spoon, spread out the sauce on top of the pizza crust, leaving a 1-inch edge.

I love this Italian meatloaf recipe. I added shredded vegetables to the meatloaf recipe. It tastes great and is easy to put together. It serves 6 to 8 people depending on how big the slices are. You can even put it together the night before. I like to freeze it after it is cooked too. It's a very versatile dish.

How to make an Italian Meatloaf Recipe?

Ingredients for this Italian Meatloaf Recipe

First, gather the below ingredients. Measure them out and set them aside.

1 pound 90% ground beef (I used 85%)

1/3 cup Tomato sauce and 1 cup tomato sauce

1 - 2 cups of Italian Herb Breadcrumbs

4-5 Carrots (when using small use 5, medium use 4)

1 Garlic Clove

2 Small Zucchini

1/2 Onion

1 Egg

3/4 cup of Parmesan Cheese or Romano

1/2 tsp Salt

1/8 tsp Pepper

1 tbsp Parsley

1 tbsp Basil

Cooking Instructions for an Italian Meatloaf Recipe

Preheat oven to 400 degrees.

Clean all the veggies and chop them into pieces that would fit in your food processor. Carrots, garlic, zucchini, onion, in the food processor and shred it.

In a large bowl, mix all ingredients together. I put the meat in first, then the shredded veggies, Parmesan cheese, salt pepper, parsley, basil, 1/3 cup tomato sauce. Then I scrambled the egg and placed it in the mix.

Shape into a meatloaf shape form and place it on parchment paper on the cookie sheet. Another option is to form the meat mixture into individual size loaves. Another option is to use non-stick spray and coat a muffin tin and make individual meatloaf muffins. You can also make a meatloaf form ring as well.

Cover with the 1 cup of pre-made tomato sauce and place in the oven. Cook for 60 minutes for the large meatloaf or until the meat reaches the temperature of 160 degrees. Let stand for 10 minutes before cutting.

While going through my freezer I realized I had one pack of chuck left stashed at the very bottom. I thought I grabbed them all but alas, I didn't. So, I had to think of something to do with this meat that 1. didn't take long to cook, and 2. that my kids would love to eat. Here's what I came up with... Quick Sunday Chili. Sunday because it was Sunday when I made it. "Quick" because it only took me one (1) hour to cook. And, if you have made chili before, you know that chili usually takes a lot longer than one hour.

Easy Sunday Chili Recipe

Quick Sunday Chili Recipe Ingredients

2 garlic cloves minced or pressed 2 tbsp olive oil 1 shallot minced 1 lb Beef chuck (cut each beef chuck piece into quarters) 2-3 tbsp flour enough to coat the beef 2 tbsp chili powder 1.5 tsp cumin 1 can diced tomato 1 tbsp tomato paste 1 cup chicken broth 1 can of red beans 1 can of cornSalt and pepper to taste

Quick Sunday Chili Recipe Instructions

First, dredge the meat in the flour and set aside.

Then, add olive oil and garlic for 2 minutes, then add the shallot for 3 minutes.

Now, add the beef, cumin, and chili powder and stir. Cook for 5-10 minutes, until the meat is brown but not burned. Then, add broth, tomato paste, diced tomatoes, and red beans.

Then, cook 40 minutes on low heat. Add corn and cook for 15 minutes on low.

Let it sit for 20 minutes, then serve. Add salt and pepper to taste.

Tip: I used a terracotta sauce pan which helped keep the temperature low. I found that it takes longer to heat up, but when it does, it stays warm for a while. If you decide to use a stainless steel or another type of saucepan, be sure the temperature remains low, or you will burn the bottom of the pan.

It is believed that Chimichurri originated in Argentina. According to my research, it may have been developed by gauchos (Argentine cowboys) to flavor and preserve grilled meats. It is a staple in Argentine and Uruguayan cuisine. We learned about chimichurri back in the late 1990s/2000s and enjoyed it very much during our many grilling dinners. While there are a variety of ingredients people add to the recipe, I have felt that this one is more mild but flavorful. Feel free to try my Chimichurri-Marinated Chicken Thighs recipe. It will only take about 15 minutes to put together and can be used on a variety of meats and non-meat dishes.

Ingredients

2 cups fresh Italian Parsley flat leaves - remove stems

1 cup of fresh Basil - remove the stems

One onion (medium) - chopped

3 garlic cloves mashed

1 tsp kosher salt

12 tbsp extra-virgin olive oil

4 tbsp of white wine vinegar

Optional: more extra virgin olive oil

Optional: pepper

Instructions

Follow the directions below to make the Chimichurri marinate.

First, cut the stems off the parsley and basil and set aside.

Wash and dry using a paper towel.

Then, press the side of the knife into the garlic cloves and open them, and set aside. Remove the hard end.

Now, chop up the onion and set it aside. Then, measure out the olive oil, wine vinegar, salt and set aside.

Then, place all the ingredients —parsley, basil, onion, garlic, olive oil, and wine vinegar — in a blender and blend until thoroughly mixed, resembling a pesto sauce.

Next, place your chicken thighs on a platter and add 1/2 cup of the marinade to both sides of the chicken thighs.

Then, place in refrigerator for at least 1/2 hour to 1 hour or overnight.

Soup are great, but when you are on a Keto diet, it can be more difficult to find a keto-friendly soup. This Keto garlic sausage soup recipe is for the garlic lovers out there—I am one of them! Removing the seasoned sausage and making it into one-inch meatballs added so much flavor to the soup. The soup is great for weeknight meals.

KETO Garlic Sausage Soup Recipe Ingredients:

2 teaspoon of avocado oil1/8 teaspoon of red pepper flakes4-5 garlic minced4 cups of bone broth to cover1 red pepper chopped1 white onion chopped4 links of Italian sausage mild remove skin and roll into 1 inch balls2 cups spinach1 tbsp Parsley driedSalt and pepper

KETO Garlic Sausage Soup Recipe Instructions:

Add 1 tsp avocado oil, garlic, and red pepper flakes to Dutch oven for 1-2 minutes.

Add peppers and onion and cook for 3 minutes until opaque, then remove the mixture from the pan to a plate. Set aside.

Add 1 tsp of avocado oil to a hot but not smoking Dutch oven pan.

Add uncooked sausage balls. Brown on all sides for 5-7 minutes in a Dutch oven. Sprinkle with dried parsley.

Add broth to cover, peppers, sausage, and onion mixture with 1 tsp of parsley on top, lightly salting and peppering. Bring to a boil and simmer for 15 minutes.

Add the spinach to the top and cover for 5 minutes or until wilted.

Stir and remove from heat and serve.

I made a dessert recipe for a summer activity to bring to my next BBQ. It's straightforward and fun to make. Get the kids involved, and it will be even more fun. I made it at my last BBQ, and everyone loved it! I made two recipes, one with peanut butter and one without. Try this peanut butter smores cupcake recipe for your next gathering.

Easy Peanut Butter Smores Cupcakes Recipe Ingredients:

3/4 cup of butter (1 1/2 sticks) butter 14 graham crackers 1/2 cup confectioner sugar 12 tsp smooth peanut butter 24 -2 pieces of Hershey chocolate pips 12 regular size marshmallows cut into thirds

Simple Peanut Butter Smores Cupcakes Recipe Instructions:

Spray regular-size muffin tins. Preheat oven to 350 degrees. Then, melt the butter.

Using a food processor, crush the graham crackers and confectioner sugar.Add graham cracker mixture to a bowl and pour melted butter into it and stir until wet. Wait till it cools a bit.

Take 3-4 tablespoons or more of the mixture and press it down into the muffin tins. Make a cup using the back of an ice cream scooper. Then bake in the oven for 9 minutes or until browned.

While baking in the oven, cut the marshmallows into thirds with kitchen shears.

Then, take it out of the oven and add one teaspoon of peanut butter per muffin.

Now, break apart the chocolate and add two pieces of Hershey chocolate pips to each muffin tin.

Then, place the three pieces of the marshmallow on top.

Now if you want the marshmallow to be browned, place it under the broiler for 1 -2 minutes. Watch it! It will burn.

Let them cool in the pan for 15 minutes and then carefully remove them from the pan. They came out of the pan nicely, but be sure to wait 15 minutes.

I am a big fan of chicken thighs (boneless and skinless). They are super easy to cook up for weeknight meals. This recipe shares a sheet pan recipe that is easy to prep and cook and easy to make for those busy nights. The trick with this recipe is that you can quickly cook it in two sheet pans lined with parchment paper. Read on to see what is in this Chicken Thighs and Swiss Chard Recipe, and let's get cookin'.

Ingredients

With these easy-to-find ingredients, you can make this dinner tonight!

1 lb Sweet Potatoes - clean and peel and cube

1 lb boneless skinless chicken thighs

1 lb sliced portabello small mushrooms - cleaned and cut to make bite-size pieces

1 lb Swiss chard - cleaned and remove the stem

6 tbsp olive oil

6 tbsp balsamic vinegar

2 tsp thyme-dried

2 tsp salt

1 tsp pepper

Instructions - Chicken Thighs and Swiss Chard Recipe

Gather all the ingredients above and do the following steps. It should take about 15 minutes to prep the vegetables and season everything. You will need two(2) baking sheets for this recipe.

In the 1990s, my grandmother from Italy passed away. When my mother returned after her funeral, she brought me back the linen towels that had been given to my grandmother when she got married. In the 1930s, it was a tradition in Italy to provide linen towels to the bride. These towels had crocheted lace on the ends and were handmade by relatives. I was given five of them - some were in white and some in a cream color. They were linens that my grandmother never used and were in the original packaging.

Over the years, I couldn't decide what to do with these, as we didn't use linen towels in our home. This year, I have been doing many upcycling projects to honor other family members who have passed, and I wanted to revisit these items.

I decided to have my antique linen towels turn into a tablecloth. Follow along to see how I honored my grandmother by using these items that were given to me so long ago.

The Crochet Lace Runners were also passed down to me from someone who has since passed away. I was given the crochet lace runners, plus several more, from my sister-in-law. She was clearing out her husband's aunt's house and thought I could do something with them. I also loved that I was able to honor a family's cherished treasure.
