Happiness in the Kitchen with Holly I am passionate about healthy cooking! I LOVE to teach others simple recipes using fresh ingredients. I also love promoting small local businesses! ☺️

To say I love to cook is an absolute understatement! My favorite thing in the whole world to do is experiment in my kitchen! My kitchen is my happy place! (Thus, the name of my page Happiness in the Kitchen). I personally eat extremely healthy & prefer to use fresh, whole ingredients as opposed to processed foods. I love to teach kids and adults how to cook healthy foods. I teach occasional adult

demonstration cooking classes & occasional kids hands-on classes. Because I am a full-time school teacher, the cooking classes are by request. So, just send me a message if you'd like to get a group of people together for a class. I also enjoy doing cooking demos for Girl Scout Troops! I specialize in cooking classes for kids/adults with food allergies! I am happy to accommodate anyone with allergies to gluten, dairy, nuts, etc. Classes for kids ages 5 and up:
$40 per child
In a small group setting in my kitchen, the kids will get to help with all the measuring, mixing, grating, pouring, etc. to make a main dish, a side dish, a drink & a dessert. Then they will get to sample all the food they make! I will do all the clean up! I will accommodate for any allergies, so LMK when you rsvp if your child has any allergies! I want this to be a FUN experience for them! Each class is 1 1/2-2 hours. Adult Class Details:
In an intimate setting, you’ll watch me prepare three recipes. You can choose if you want those to be a main dish, a side dish, an appetizer, a dessert or a beverage. I will also share tips that will help you incorporate ways to make your meals healthy, delicious and budget-friendly using simple, fresh ingredients. The classes are at my home in Urbandale (or at your choice of location) where you will sample the foods made in class. Each class lasts approximately 1 1/2 - 2 hours. $45 per class

Kids Hands-On Cooking Birthday Parties:
By appointment only. I will come to your child's birthday party & teach all the kids how to make the food for the party! We can pick out recipes that the birthday kid will love. I’ll provide aprons for them to keep, do the grocery shopping, prep work, entertaining, clean up, & all you have to do is send out the birthday invitations & take pictures of all the fun! Private Classes:

What a great option for a girls night out, guys night out, couples date night, birthday party, bridal shower, a corporate team-building event or any other occasion that fits your needs. My passion for helping others find joy in the kitchen is limitless and I am willing to work with you if you are interested in holding such an event. Let me know how I may help! About 60% of the recipes I post are ones that I found somewhere else & then I changed/substituted/tweaked it to make it even better, healthier & simpler. About 35% of the recipes I post are ones that I completely made up on my own. The other 5% of the recipes are ones that I found somewhere and didn't tweak at all and I always give credit to the person I got the recipe from. I often try about 4-6 new recipes each week. They aren't all main dish recipes, but they might be a new side dish, dessert, smoothie, snack, etc. I rarely make the same recipe twice, unless I truly love it! I love to help people get healthy, budget-friendly, delicious & simple meals to the table in 30 minutes or less, so they have more time to focus on the important things in life. I also like to give quick tips that make life easier in the kitchen. I take the food pics with my iphone 'cause it's so much quicker than grabbing my good camera & downloading it to my computer. So, the pics aren't exactly the kind you might find on a fancy blog, but I'm more about the food than the photography. :)

I have a major sweet tooth! But, the bottom line is if I am going to have dessert, I don’t want to feel guilty about it. Our bodies are more fragile than we know and since I do plan to enjoy life and eat sweets, I want them to be as nutritious as possible. I don't make dessert from a box and I don't use white sugar, brown sugar, corn syrup, aspartame or any other things our bodies do better without. (Sugar also really causes pain & inflammation in my broken sesamoid bone, but that's a whole other long story!)

One of my favorite parts of hosting cooking camp is hearing what the kids have to say afterward! 🧑‍🍳❤️

🍪 Favorite foods (I love seeing that some of their favorites were vegetables and main dishes).

📚 New things they learned: measuring techniques, knife skills, decorating tips, baking tricks, kitchen safety, etc.

🎉 Favorite parts of camp:
• Trying new recipes
• Decorating and baking challenges
• Working with friends
• Taste-testing their creations
• Having fun in the kitchen!

Watching kids gain confidence, learn new skills, and get excited about cooking is what makes these camps so rewarding. Thank you to all of the amazing campers who spent part of their summer with me. I loved cooking with each and every one of you and can’t wait for the next camp! ❤️👩‍🍳

Have you ever made a pork tenderloin in your air fryer? Look how juicy mine came out! 🤤 It was perfection! Mine was a little less than a pound and I think it took 13 minutes at 400 degrees. Be sure and use a food thermometer to check the internal temperature.

Another great day of cooking camp is in the books! 👩‍🍳👨‍🍳 Between the morning and afternoon camps, the kids made two different flavors of crêpes, a kale salad with homemade dressing, fiesta pinwheels, white chocolate bars, hummus, flower shaped biscuits, a taco bake, Brussels sprouts and frosted lemonade. 

Thursday morning I had my beginner campers in the kitchen, and it was so much fun watching them build confidence as they learned new cooking skills. Their excitement is contagious!

That afternoon was all about my experienced campers, and the highlight of the day was definitely our brownie decorating contest. The kids had just 15 minutes and a table full of toppings to create their masterpieces. The creativity was incredible, and the judges had a tough time choosing winners! (See previous post for the top brownie photos).

I love seeing these young cooks learn, create, and have fun in the kitchen. Thanks to all the parents for sharing your amazing kids with me this week! ❤️

I have several spots available in my classes in July.

I will be offering 2-hour cooking classes on the following dates:

📅 Wednesday, July 1 (2 spots left)

📅 Tuesday, July 14 (FULL)
📅 Tuesday, July 28 (4 spots)

⏰ 11:00 AM – 1:00 PM

During each class, the kids will work together to prepare:
🍽️ A main dish
🥗 A side dish
🥤 A drink
🧁 A dessert

And the best part? They’ll enjoy eating the meal they created during the last 15 minutes of class!

Cost: $75 per child

Payment must be made via Venmo at the time of registration to reserve your spot.

Classes are for kids ages 8-13.

To register, send me a message and I’ll provide the class location and gather information about any food allergies or dietary restrictions your child may have.

I may add a couple more classes in August, but I won’t post those unless these July classes fill first—so don’t wait too long to grab a spot! ☺️

Today at cooking camp, our experienced bakers took part in a brownie decorating contest! 🍫🎉

The challenge: 15 minutes, 20 different toppings, and unlimited creativity. The brownies were judged by four adults on two criteria: creativity and restaurant-worthiness.

Day 1 of cooking camp is in the books, and what a fun day it was! 👩‍🍳👨‍🍳

This morning I welcomed my beginner campers (grades 3-5), and it was so much fun watching their excitement as they learned new skills and gained confidence in the kitchen. 🙌 This afternoon, my experienced campers (grades 7 and up) jumped right into a hands-on cooking experience, and they did an amazing job!

I snapped a few photos throughout the day, although not nearly as many as I would have liked because I was having too much fun teaching and cooking alongside these awesome kids. 😊

I’m looking forward to another action-packed day in the kitchen tomorrow!

Heading to a potluck today, so I whipped up a batch of brownies topped with the most amazing frosting! 😍

Remember the Scotcharoo cake I made recently? The frosting was so ridiculously good that I just had to make it again. And in other exciting news, my summer cooking camps start tomorrow! I’m so excited to welcome this year’s campers into the kitchen. ☺️ I’ve got a few new ideas and activities planned that I can’t wait to try out. It’s going to be a fun summer of cooking, learning, and making delicious memories together! 👩‍🍳

Butterscotch Chocolate Buttercream

3 cups salted butter
8 cups powdered sugar
2 teaspoons vanilla extract
6 oz semi sweet chocolate
10 oz butterscotch chips
½ cup heavy cream

1. In a medium microwave-safe bowl, add chocolate, butterscotch chips, and heavy cream. Microwave for 30 seconds and stir.

2. Continue to microwave in 15 second intervals, mixing each time, until everything is completely melted and the mixture is smooth. Set aside.

3. In the bowl of a stand mixer fitted with a paddle attachment, beat the butter on medium high speed until it’s smooth and light in texture and color.

4. With the mixer on low speed slowly add the powdered sugar and then the chocolate-butterscotch mixture. Mix in the vanilla and beat for 2-3 minutes.

If making ahead of time, store in the refrigerator for up to one week. Remove from the refrigerator 3-4 hours before cake assembly.
