Our cast iron dealer just re-stocked her space with some high quality restored cast iron skillets. Griswold, Wagner, Victor, Favorite Pique Ware, and more. Cast iron is dense and retains heat much better than other pan materials. When you add cold ingredients like meat or vegetables, the pan doesn't lose its temperature, allowing you to get a deep, crispy crust and locking in juices.
