Strawberry heart macs are perfect for Valentineโs Day! ๐ฅฐ๐
Filling is strawberry cheesecake ganache; recipe below!
โก 350 gr white chocolate
โก 100 gr cream cheese, cut up + room temp
โก 150 gr strawberry purรฉe
โก 15 gr vanilla bean paste
โก 20 gr inverted sugar (optional)
1. Put chocolate + cream cheese together in a bowl
2. Heat up purรฉe + paste in saucepan on stove until bubbling
3. Pour heated mixture over chocolate + cream cheese
4. Stir/mix together with a rubber spatula
5. Use immersion blender to emulsify + make smooth
6. Transfer to a container, lay plastic wrap on top of ganache to prevent drying out, place lid on container, and let it set
Keep it in your fridge up to 5 days or in your freezer up to a month.
Some tips:
- macs that have multiple piping components require longer resting so they donโt crack when baking; either rest for an hour in air-conditioned area or pop in oven at 250ยฐ for 3 mins with oven door propped open
- to get the color red, use a powder coloring instead of gel; I swear by โs Master Elite collection (use my code MACANOMNOM when purchasing for a discount!)
- donโt bang your tray when doing shaped/character macs; use a scribe to remove air bubbles
- use silicone mats instead of parchment as the batter wonโt spread as much and will stay put wherever you piped it
- use royal icing instead of batter to decorate/do details for a cleaner look
- use a Swiss mac recipe; Swiss meringue is the most stable for characters as the batter takes longer to break down which is great for longer piping time (Iโm just lazy and do French so I donโt have to wash extra stuff lol, but French requires you to be faster with piping)
- despite what many people say for characters, you do NOT have to undermix! who wants lumpy macarons?!
- for multiple colors from one batter, undermix all of it first and then separate as needed in different bowls; add the colorings and then finish mixing each separately
