Strawberry heart macs are perfect for Valentineโ€™s Day! ๐Ÿฅฐ๐Ÿ“

Filling is strawberry cheesecake ganache; recipe below!

โ™ก 350 gr white chocolate
โ™ก 100 gr cream cheese, cut up + room temp
โ™ก 150 gr strawberry purรฉe
โ™ก 15 gr vanilla bean paste
โ™ก 20 gr inverted sugar (optional)

1. Put chocolate + cream cheese together in a bowl
2. Heat up purรฉe + paste in saucepan on stove until bubbling
3. Pour heated mixture over chocolate + cream cheese
4. Stir/mix together with a rubber spatula
5. Use immersion blender to emulsify + make smooth
6. Transfer to a container, lay plastic wrap on top of ganache to prevent drying out, place lid on container, and let it set

Keep it in your fridge up to 5 days or in your freezer up to a month.

Some tips:
- macs that have multiple piping components require longer resting so they donโ€™t crack when baking; either rest for an hour in air-conditioned area or pop in oven at 250ยฐ for 3 mins with oven door propped open
- to get the color red, use a powder coloring instead of gel; I swear by โ€™s Master Elite collection (use my code MACANOMNOM when purchasing for a discount!)
- donโ€™t bang your tray when doing shaped/character macs; use a scribe to remove air bubbles
- use silicone mats instead of parchment as the batter wonโ€™t spread as much and will stay put wherever you piped it
- use royal icing instead of batter to decorate/do details for a cleaner look
- use a Swiss mac recipe; Swiss meringue is the most stable for characters as the batter takes longer to break down which is great for longer piping time (Iโ€™m just lazy and do French so I donโ€™t have to wash extra stuff lol, but French requires you to be faster with piping)
- despite what many people say for characters, you do NOT have to undermix! who wants lumpy macarons?!
- for multiple colors from one batter, undermix all of it first and then separate as needed in different bowls; add the colorings and then finish mixing each separately

I piped some icing transfers for their faces because I felt like that would resemble the real potato head toys โ˜บ๏ธ

Making all these Toy Story macarons to celebrate Toy Story 5 having been announced and for some cool people ๐Ÿฅฐ

For the buttercream, I just did my usual Swiss Meringue buttercream and add a packet or two of Trung Nguyรชn G7 Instant Black Coffee (Iโ€™ll link it in my story/What I Use highlight). Add it into the egg whites first so it can dissolve. Below is the base I use for most of my buttercream fillings.

I KNOW THIS HAS ABSOLUTELY NOTHING TO DO WITH BAKING AND IS PROBABLY THE LAST THING YOUโ€™D EVER WANT TO SEE FROM A BAKING PAGE, BUT I WANTED TO SHARE THIS BECAUSE I THINK ITโ€™S SOOOO COOL ๐Ÿ˜…

I just wanna watch him for a bit and I have plants that they like to eat so Iโ€™ll give him those trimmings. I will relocate him in a day or two because I will have a panic attack when he can fly ๐Ÿ˜ตโ€๐Ÿ’ซ

Heโ€™s kinda cute in gross freaky way where I will never touch him with my bare hands, but I wanna watch him eat and poo lol

I shot this with a 100mm macro lens which I absolutely love and didnโ€™t think Iโ€™d use it to shoot bugs ๐Ÿ˜‚

โ™ก 2 sticks softened unsalted butter
โ™ก a lilโ€™ pinch of salt
โ™ก 3 1/2 cups/455 gr powdered sugar
โ™ก 3 tbsp/45 ml lychee purรฉe (or 2 tbsp/30 ml extract)
โ™ก 1/2 tsp/2.5 ml rose water
โ™ก a tiny drop of pink food coloring (optional)

With a mixer, beat the butter and salt until creamy.
Gradually mix in powdered sugar and add the lychee, rose water, and pink coloring. You can add in more lychee until you get a texture/taste to your liking.

I had to re-do this character/design 3 times before I got a decent batch. Macarons are so finicky and it certainly doesnโ€™t help when doing character macarons - even when you arenโ€™t doing anything different than you normally do.

It was very frustrating and had me feeling deflated. Hours of piping just for it to not work out and then having to start over. One of my biggest problems is that Iโ€™m very hard on myself and if I donโ€™t get it right on the first time, I feel like a failure. Thatโ€™s such an incredibly unhealthy way of thinking and I know Iโ€™m not alone with that.

Letโ€™s try our best to be more gentle with ourselves ๐Ÿ’œ

but catch me crying the next time I get a bad batch of macarons ๐Ÿ˜‚
