A friend asked if I could cook a ham for her if she dropped it by. She told me that her mother was allergic to both garlic and onion. Seasoned with ginger, pepper and smoked paprika, smoked at 200 until temp was around 130, then started applying the glaze which consisted of brown sugar, apple juice pepper infused honey and cherry preserves. Every 15 minutes till it reached a temp of 140. It smelled and looked amazing.

A new recipe, Al Pastor Tacos, Once I make sure the recipe is right we will shoot a video. One note, the picture of the pineapple inspired salsa, was meant to show the difference between home made, and canned. The only thing that canned pineapple did good was give me more pineapple juice. Special thanks to Michelle K Petersen who actually remembers to take pictures of the food when it is served.

Pro tip, most bacon comes with 15 slices, so all you need is 15 jalapenos when you are making cheese stuffed jalapeno poppers, Of course you will need 2 packages if you only use one half of the jalapeno. Yes, some people do that.

Rib day at the Bully Pit. 3 hours in the smoke and time to wrap with some butter, brown sugar and honey. Back they go for about another 1.5 hours, then unwrap and glaze until they are ready. Funeral potatoes are ready to go while the ribs are resting and also some smoked cream cheese.

Had a great Saturday at Bully Pit BBQ, we did pork belly, pickled red onions, and chili infused honey, that was made into tacos. Also we made krab mac and cheese. and an apple dump pie. We did film some videos, and I am looking for someone to give me a tutorial on editing videos. In the meantime you get pictures.

With the help of Mike Whitman and Blake Kenneson we actually shot some video this weekend. Made from scratch baked beans, a full packer brisket. and funeral potatoes. There were some glitches along the way. Probably one of the most important things we forgot to film when I pulled them off the grill. and cut the point from the flat to make burnt ends, and the slicing of the brisket.

In our defense, food was about 2 hours late due to an unforeseen issue with the Bully Pit, and we were hungry. I will revisit those cooks, and also have another planned for this coming weekend.
