A friend asked if I could cook a ham for her if she dropped it by. She told me that her mother was allergic to both garlic and onion. Seasoned with ginger, pepper and smoked paprika, smoked at 200 until temp was around 130, then started applying the glaze which consisted of brown sugar, apple juice pepper infused honey and cherry preserves. Every 15 minutes till it reached a temp of 140. It smelled and looked amazing.
