As we all know prices just keep going higher and higher. It costs more to feed our families than it used to. Not only are the prices raising, but many of us have become a victim of instant gratification. Quicker, and sometimes the same price or even less to run to the local burger joint and pick up dinner. Bring it home, set it on table. Everyone gets what they want , eat and done. No dishes. No clean up, no mess…… no memories. Even though things are harder to come by, we still need those moments, those table discussions, those memories. That special time of togetherness.

Could you all please help by sharing your “ struggle “ meal. We all had them. The fact that we remember them, and even still make them , speaks of their impressions on us.

We never know when something that we say or do can help make someone’s life a little easier. We are here to help each other.

Air Fryer Reuben Roll-Ups

Ingredients

* 8 slices rye bread, crusts removed
* 1 cup shredded Swiss cheese
* 8 oz corned beef, chopped
* 1 cup sauerkraut, drained and squeezed dry
* 3 tablespoons melted butter
* Thousand Island dressing for dipping

Directions

1. Use a rolling pin to flatten each slice of rye bread.
2. Divide the Swiss cheese, corned beef, and sauerkraut among the bread slices.
3. Roll each slice up tightly and place seam-side down.
4. Brush all sides with melted butter.
5. Place in the air fryer basket in a single layer.
6. Air fry at 400°F for 5 minutes or until golden brown and crispy.
7. Serve warm with Thousand Island dressing for dipping.



Easy Pigs in a Blanket

Ingredients

* 2 package refrigerated biscuits (8 count)
* 8 hot dogs, cut in half

Directions

1. Preheat oven to 375°F.
2. Separate biscuits and flatten each into a circle.
3. Wrap one biscuit around each hot dog.
4. Place on a greased baking sheet.
5. Brush with melted butter if desired.
6. Bake for 15-18 minutes or until golden brown.
7. Serve with ketchup, mustard, or your favorite dipping sauce.



Coconut Cream Puff Cake

Ingredients

Crust

* 1 cup water
* 1/2 cup butter
* 1 cup all-purpose flour
* 4 eggs

Filling

* 3 (3.4 oz) boxes coconut cream instant pudding
* 4 cups cold milk
* 8 oz whipped topping, thawed

Topping

* 1 cup sweetened shredded coconut, toasted

Directions

1. Preheat oven to 400°F.
2. In a saucepan, bring water and butter to a boil.
3. Remove from heat and stir in flour until a ball forms.
4. Let cool 5 minutes.
5. Beat in eggs one at a time until smooth.
6. Spread dough into a greased 9x13-inch baking dish.
7. Bake for 30-35 minutes until puffed and golden.
8. Cool completely.
9. Whisk pudding and milk together until thickened, add in cream cheese and beat well.
10. Spread pudding over cooled crust.
11. Top with whipped topping.
12. Sprinkle generously with toasted coconut.
13. Refrigerate at least 4 hours before serving.



Baked Beans

Ingredients

* 3 cans pork and beans
* 1 cup bacon bits
* 1 medium onion, diced
* 1/2 cup pancake syrup
* 1/2 cup brown sugar
* 2 tablespoons molasses
* 3 tablespoons yellow mustard
* 1/2 cup ketchup

Directions

2. Sauté onion in a skillet until soft and lightly browned.
3. In a large bowl, combine pork and beans, bacon bits, sautéed onion, pancake syrup, brown sugar, molasses, mustard, and ketchup.
4. Pour into a microwave safe baking dish.
5. Microwave for 20-30 minutesstirring once halfway through.
6. Let rest 10 minutes before serving

Friends, tonight our hearts are with another member of the Facebook cooking community.

Many people watched the live stream where John experienced a medical emergency. We want to lift Momma, and the family up in prayer during this difficult time.

Sloppy Joes

Ingredients

* 1 pound lean ground beef
* 1 tablespoon unsalted butter
* ½ yellow onion, chopped
* ½ green bell pepper, chopped
* 1 clove garlic, minced
* 2 teaspoons yellow mustard
* ¾ cup ketchup
* 2 tablespoons brown sugar
* ½ teaspoon salt
* ¼ teaspoon black pepper

Directions

1. In a large skillet, brown the ground beef over medium heat. Drain excess grease if needed.
2. Add butter, onion, and green pepper. Cook 4–5 minutes until softened.
3. Stir in garlic and cook 30 seconds.
4. Add mustard, ketchup, brown sugar, salt, and pepper.
5. Reduce heat and simmer for 10–15 minutes, stirring occasionally.
6. Serve on hamburger buns.



Cheddar Bacon Ranch Chip Dip

Ingredients

* 24 ounces sour cream
* 2 cups shredded cheddar cheese
* 4–5 green onions, sliced
* ½ cup bacon bits
* 1 packet ranch dressing mix

Directions

1. In a large bowl, combine sour cream and ranch packet until well mixed.
2. Stir in cheddar cheese, green onions, and bacon bits.
3. Cover and refrigerate for at least 1 hour before serving.
4. Serve with potato chips, crackers, or fresh vegetables.

Gooey Strawberry Butter Cake

Cake Layer

* 1 box strawberry cake mix
* 1 egg
* ½ cup butter, melted

Gooey Layer

* 8 ounces cream cheese, softened
* 2 eggs
* 1 teaspoon vanilla
* 2 cups powdered sugar

Directions

1. Preheat oven to 350°F.
2. Mix cake mix, egg, and melted butter. Press into a greased 9x13-inch pan.
3. Beat cream cheese until smooth.
4. Add eggs and vanilla; mix well.
5. Gradually beat in powdered sugar until smooth.
6. Spread over the cake layer.
7. Bake 35–40 minutes, or until the edges are set and the center is still slightly gooey.
8. Cool before cutting.
