Turmeric muffins!
No food coloring, the turmeric gives it an ombre effect (best seen in the last picture).
❓️Did you know turmeric is a powerful anti-inflammatory and anti-oxidant? In my research on turmeric, I found that some people take turmeric supplements instead of ibuprofen! Also interesting to note, turmeric is best absorbed when eaten with black pepper and high fat foods.
😋 These muffins are comparable to the flavor of a spice cake.

I love breakfast, just not when I have to wake up and take the time to cook it. Breakfasts for me are often bagels, or whatever leftovers we have in the fridge I can heat up quickly. Tonight I took the time to make some "Egg Muffins" for my husband and I.
Ingredients needed:
10 eggs
1/2 bag of frozen shredded hashbrowns (will need to be thawed)
1/4 chopped onion
Your choice of meat
Cheese
Splash of milk, or heavy whipping cream (optional)
Instructions:
Pre-heat oven to 350°
Spray muffin tin with non-stick spray.
Press thawed hashbrowns into regular size muffin tin. (Pampered Chef Muffin Tin pictured.)
Bake for 15 minutes or until golden brown.
In medium bowl whisk together eggs and milk until well mixed.
Once the hashbrowns are done cooking, pull out of oven and immediately pour in egg mixture.
Add your chopped onions and your choice of meat to each cup.
Cook for 15 minutes or until eggs are set.
Sprinkle top with cheese and cook 5 more minutes until cheese is melted.
Let cool on cooling rack. (Pampered Chef stackable cooling rack pictured.)
