PÂTE BRISÉE MADE WITH A BISCUIT DIE

You can also use the cookie die with a 4 mm thickness.

400 g type 00 or T45 flour

125 g cold butter, cut into pieces

125 g icing sugar

1 pinch of salt

Flavorings of your choice (orange zest used here)

2 eggs

No baking powder is used, but you may add some if you wish.
The eggs act as the liquid
(approximately 100–110 g).

Marmalade, jam of your choice, chocolate spread, etc. — let your desires and inspiration guide you.

Biscuit dough generally requires only one mixing step.

Butterfly Pea Rice Pasta – Recipe

Ingredients

300 g rice flour
10 ml cooking oil
A pinch of salt
A small amount of lemon juice
250 ml butterfly pea flower extract
Additional ingredients

100 g tapioca starch
100 g wheat starch
100 g potato starch
Method

Lightly mix the rice flour, cooking oil, salt, lemon juice, and butterfly pea flower extract using a whisk.
(A handheld mixer with a whisk attachment may also be used.)
Cook the mixture in a pan over medium heat, stirring continuously until it becomes slightly dry.
Transfer the dough to a mixer. Add the tapioca starch, wheat starch, and sweet potato starch.
Mix and press for 15 minutes, extruding through a large noodle die.
Cut into small pieces and microwave for 2 minutes, or steam briefly until cooked.
Return the dough to the mixer, mix and change the die to extrude.

GNOCCHI by S11 or T20
Ingredients:
750 g of potatoes
300 g of flour (type 0 or T45)
40 g of cornstarch
2 egg yolks
Salt, pepper, and Parmesan
Preparation:
Cook the potatoes the day before.
Mash them and let them rest in the refrigerator overnight.
The next day, add the egg yolks along with the other ingredients, mix quickly (outside of the machine), place the mixture into the machine bowl.
Start the extrusion directly without remixing — do it little by little (around 200g at a time).
Cook in salted boiling water. Once they float to the surface, they’re ready ☺️
⚠️ Tip:
Put the first few pieces of dough back into the bowl — the first ones never look great. The disc needs to warm up a bit for better results.
Don’t hesitate to flour them afterwards to prevent sticking.
Sauce Ingredients:
800 g of Castelmagno cheese
200 ml of milk
Butter to taste
15 g of cornstarch
Salt and pepper
Sauce Preparation:
In a saucepan, mix the milk with the cornstarch until well dissolved.
Add the Castelmagno cheese (grated very finely) and the butter.
Melt over very low heat, stirring constantly.
Once the gnocchi float, add them to the sauce and enjoy 😉

POTATO GNOCCHI
Ingredients:
• 550g of fresh potatoes
• 150g of all-purpose flour ("00" flour)
• 100g of potato starch
• 2 tablespoons of Parmesan cheese
• A pinch of salt
Preparation:
1. Cook the potatoes the day before, peel them, and store them in the fridge.
2. The next day, mash the potatoes using a potato ricer
3. Mix the dry ingredients together.
4. Gently combine the flour mixture with the potatoes.
5. Put all in the machine and extrude immediately (no mixing)
6. At first, the gnocchi might not turn out perfect, but after a few tries, they come out well!
