3/4 cup sugar

1/2 cup sweetened condensed milk

1/2 cup water

1 cup white chocolate chips

1 tbsp gelatin powder bloomed in 2 tbsp water

Gold edible luster dust

1 drop yellow gel food coloring

For the Base & Garnish:

6 butter waffle cookies or shortbread rounds

Edible gold leaf

Toffee bits for the rim

Directions

Make the Core: Melt sugar in a saucepan over medium heat until it turns a deep amber. Carefully whisk in butter, then heavy cream and salt. Simmer for 1 minute.

Pipe the caramel into mini hemisphere silicone molds and freeze for at least 3 hours until rock solid.

Make the Mousse: Heat 1/2 cup heavy cream and vanilla bean paste until simmering. Pour over white chocolate chips and add bloomed gelatin; whisk until smooth.
