Always loved a classic roasted aubergine energy but the candied olive and chillie chutney just brought this baddie to life. The pinenuts and peanut dressing for fat and tons of lime to bring that bright acidity in. What a class act.

And the best part I made it accidentally 🤣 oops!!

Crispy fried chicken livers tossed in a sweet and tangy redux, creamy and salty labneh and a bright parsley and lemono emulsion and just to bring it round some vanilla picked red onion and thyme.

totally happy with how fkn this came out. It’s my new favourite way to prepare livers
