Stocking up on my for the fridge 🩷 Choose any sweet, sour & salty to make a brine and add some aromatics - easy peasy! Today it’s Apple cider vinegar, honey, salt & water with thyme and coriander seeds. Pro tip: to keep pickles crunchy, add a few bay leaves :)

There are many variations of the recipe, but your base of 4 hard boiled eggs and a few tablespoons of neutral oil is how to start with a stick blender. Then a combination of sweet, sour and salty additions (honey, sugar, lemon, vinegar, salt etc) to your personal taste and a splash of water will get you a low-oil healthy mayo/spread 💛 A must try!! You won’t spend on storebought again…

Love making my weekly gut-loving gherkins to snack on 💚 Baby cucumbers work the best in this recipe: Fill a sterilized jar with washed baby cucumbers, add a 2% (of the weight of the cucumbers) salt brine, and a bayleaf to keep them crunchy as well as any other aromatics you’d like (Coriander seeds and dill are my favourite) Then store in a dark cupboard for 5 - 7 days, burping daily to release gas build-up. Then move to the fridge. Easy Peasy 🥒

With just a tablespoon of my last batch of yoghurt added to a litre of heated full-cream milk then left to incubate in a cupboard overnight gives you a delicious, creamy plain yoghurt - an excellent source of probiotics, containing a higher concentration of live cultures than store bought. This just needs a 5 minute gentle simmer. Quick & easy, healthier & less expensive than the popular store brands

Another batch of on the go. I use a 2% salt brine and add some aromatics (todays is red onion, bay leaf & coriander seeds) Store these in a dark cupboard for 5-7 days, then move to the fridge 🥒 Easy Peasy
