This bake used a blend of Caputo and Eureka flour, producing a loaf with a crisp crust, beautiful oven spring, and a crumb that made the wait worth it 🫶

What I’ve learned after baking 3 sourdough loaves:
There’s definitely some science behind it… but honestly, there’s no one “right” way. You just have to trust your gut.
Also… I clearly need to invest in a new bread knife.
Here’s to embracing this sourdough era. 🍞✨

Hyderabadi Dum Ka Murgh 🔥

A Traditional North Indian Slow-Cooked Chicken in Creamy Cashew Gravy

Recipe
4–6 chicken pieces
1 cup yogurt
2 fried onions
12–15 soaked cashews in warm water
1½ tbsp ginger garlic paste
1 tsp masala
1 tsp kashmiri masala
1 tsp turmeric
1 tsp garam masala
Salt
1 tbsp ghee
Chopped dhania

Blend fried onion + cashews.
Add yoghurt, spices mentioned above, cashew paste, ghee and dhania to chicken. Marinate for 2 hrs.

Fry whole spices until aromatic. Add the marinated chicken.
Seal with foil & cook on low heat for 30-40minutes.
Finish with charcoal smoke (dhungar) 5 mins (forgot to video)

Smoky. Rich. Fall-off-the-bone. 🤌🏽🔥
