Red Velvet Strawberry Volcano Cake
Ingredients:
- 2 1/2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 2 tablespoons cocoa powder
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup buttermilk
- 1 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 tablespoon red food coloring
For the Strawberry Volcano Filling:
- 1 cup artisanal strawberry jam
- 1/2 cup fresh strawberries, finely diced
- 1 tablespoon lemon juice
For the White Chocolate Cream Cheese Glaze:
- 200 g white chocolate, chopped
- 1/2 cup heavy cream
- 150 g cream cheese, softened
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
For Decoration:
- 8 to 10 fresh strawberries, sliced
- 2 tablespoons strawberry jam for shine
Directions:
1. Preheat the oven to 350°F (175°C). Grease a heart-shaped bundt or volcano-style cake pan thoroughly.
2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
3. In a separate bowl, combine the eggs, buttermilk, vegetable oil, vanilla extract, and red food coloring.
4. Gradually add the wet ingredients to the dry ingredients and mix until a smooth batter forms.
5. Pour the batter into the prepared pan and level the surface.
6. Bake for 38 to 45 minutes, or until a toothpick inserted into the cake comes out clean.
7. Allow the cake to cool in the pan for 15 minutes before carefully inverting onto a cooling rack.
8. Let the cake cool completely.
9. In a small bowl, mix the strawberry jam, diced strawberries, and lemon juice to create the volcano filling.
10. Spoon the filling generously into the center cavity of the cake.
11. To prepare the glaze, heat the heavy cream until steaming but not boiling.
12. Pour the hot cream over the white chocolate and let stand for 2 minutes.
13. Stir until smooth, then whisk in the cream cheese, powdered sugar, and vanilla extract until silky and thick.
14. Allow the glaze to cool slightly until it reaches a pourable consistency.
15. Slowly pour the glaze around the top edge of the cake, creating a scalloped drip effect down the sides.
16. Arrange the sliced strawberries in the center to resemble a blooming flower.
17. Brush the strawberries lightly with strawberry jam for a glossy finish.
18. Chill for 20 minutes before serving to set the glaze perfectly.
19. Slice and enjoy the creamy white chocolate topping, rich red velvet crumb, and fruity volcano center.
