How to Make Crispy Cheesy Potato Waffles 🧇
Step 1: Prepare the potatoes
Boil 2 medium potatoes until they are about 60–70% cooked. They should be partially cooked, not completely soft. Allow them to cool slightly, then grate or mash them.
Step 2: Add the egg
Transfer the potatoes to a mixing bowl. Add 1 whole egg.
Step 3: Add the seasonings
Add salt to taste, 1 teaspoon garlic powder and ½ teaspoon black pepper powder.
Step 4: Add the cheese
Add 2 tablespoons of processed cheese and 2 tablespoons of mozzarella cheese.
Step 5: Add cornflour
Add 2 tablespoons of cornflour and mix until all the ingredients are well combined. The cornflour helps bind the mixture and gives the waffles a crispier texture.
Step 6: Add fresh coriander
Add 2 tablespoons of finely chopped fresh coriander leaves and mix well.
Step 7: Add oil
Pour in 1 tablespoon of oil and mix everything thoroughly.
Step 8: Preheat the waffle maker
Preheat your waffle machine according to the manufacturer's instructions. Lightly brush both plates with oil or butter.

Place a portion of the potato mixture onto the preheated waffle maker and spread it evenly without overfilling. Close the lid and cook until the waffles are crispy and lightly golden brown.
Step 10: Serve hot
Carefully remove the waffles and serve immediately while they are hot, crispy and cheesy. Enjoy them with ketchup, mayonnaise or your favourite dipping sauce!
Tip: Cooking time depends on your waffle maker. Make sure the egg and potato mixture is thoroughly cooked before serving.

Ingredients for Egg Pepper Masala
For frying the eggs:
• 4–5 boiled eggs, cut lengthwise into halves
• 1 tbsp oil
• A pinch of turmeric powder
• Salt to taste
• A pinch of Kashmiri chilli powder

For the pepper masala:
• 1 tbsp oil, or as required
• 1 tsp fennel seeds
• 2 green chillies, roughly chopped
• 2 onions, finely chopped
• 8–10 curry leaves
• 5–6 garlic cloves, crushed
• 1 small piece of ginger, crushed
• 2 tomatoes, made into a paste
• 2 tsp black pepper powder
• ½ tsp garam masala powder
• Salt to taste
• 2 tbsp water
• Finely chopped coriander leaves for garnish

How to Make Egg Pepper Masala
Step 1: Prepare the egg masala coating
Heat 1 tablespoon of oil in a pan. Add a pinch of turmeric powder and salt to taste. Mix well, then add a pinch of Kashmiri chilli powder and stir.
Step 2: Fry the boiled eggs
Add 4–5 boiled eggs, cut lengthwise into halves, with the cut side facing down. Fry for about 1 minute, then carefully flip and fry the other side for another minute, or until lightly golden brown. Remove the eggs from the pan and keep them aside.
Step 3: Prepare the tempering
In the same pan, add another tablespoon of oil if required. Add 1 teaspoon of fennel seeds and let them sizzle for a few seconds.
Step 4: Sauté the green chillies and onions
Add 2 roughly chopped green chillies and sauté for a few seconds. Add 2 finely chopped onions and 8–10 curry leaves. Sauté until the onions become soft.
Step 5: Add ginger and garlic
Add 5–6 crushed garlic cloves and a small piece of crushed ginger. Sauté until the raw smell disappears.
Step 6: Cook the tomato paste
Add the paste made from 2 tomatoes. Cook on low-medium heat for 3–4 minutes, stirring occasionally, until the tomatoes are cooked and the oil begins to separate.
Step 7: Add the pepper masala spices
Add 2 teaspoons of black pepper powder, ½ teaspoon of garam masala powder, and salt to taste. Mix everything well.
Step 8: Cook the masala
Add 2 tablespoons of water and mix well. Let the masala cook for 1–2 minutes on low heat so the spices blend together.
Step 9: Add the fried eggs
Gently add the fried boiled eggs to the masala. Mix carefully to coat the eggs evenly without breaking them.
Step 10: Garnish and serve
Finally, add finely chopped coriander leaves and give everything a gentle mix.
Your delicious, spicy Egg Pepper Masala is ready to serve! Enjoy it with rice, chapati, roti, dosa, or bread.
