Cheesy Chicken & Rice Bake 🍗🧀🍚✨
Creamy, comforting, and packed with tender chicken and melted cheddar cheese, this easy casserole is perfect for busy weeknights.
Ingredients:
• 2 cups low-sodium chicken broth
• 1 can cream of chicken soup
• 1 tsp Italian seasoning
• 1/2 tsp seasoned salt
• 1/2 tsp garlic powder
• 1/2 tsp onion powder
• 1/4 tsp black pepper
• 1 1/4 cups long-grain white rice
• 1 cup frozen peas
• 1 1/2 lbs boneless skinless chicken breasts, cut into bite-sized pieces
• 2 cups shredded sharp cheddar cheese
Instructions:
1.Preheat oven to 375°F and lightly grease a 9x13-inch baking dish.
2.In the baking dish, whisk together chicken broth, cream of chicken soup, Italian seasoning, seasoned salt, garlic powder, onion powder, and black pepper.
3.Add rice, peas, and chicken pieces. Stir until evenly combined.
4.Cover the dish tightly with aluminum foil.
5.Bake for 50 minutes, or until the rice is tender and the chicken is fully cooked.
6.Remove the foil and sprinkle cheddar cheese evenly over the top.
7.Return to the oven uncovered and bake for 10 more minutes until the cheese is melted and bubbly.
8.Loosely cover with foil and let the casserole rest for 10 minutes before serving.
