Burger Buns

Yield: 8 burger buns
Ingredients
* 3 1/2 cups (440g) all purpose flour
* 1 cup (240ml) warm milk
* 2 tablespoons sugar
* 2 1/4 teaspoons instant yeast
* 1 large egg
* 3 tablespoons unsalted butter, softened
* 1 teaspoon salt
For Topping:
* 1 egg, beaten
* 1 tablespoon milk
* 2 tablespoons sesame seeds
Directions
1. Activate the Yeast
* In a large bowl, combine warm milk, sugar, and yeast.
* Let stand for 5 minutes until slightly foamy.
2. Make the Dough
* Add the egg, softened butter, and salt.
* Gradually mix in the flour until a soft dough forms.
* Knead for 8 to 10 minutes until smooth and elastic.
3. First Rise
* Place the dough in a lightly greased bowl.
* Cover and let rise in a warm place for about 1 hour or until doubled in size.
4. Shape the Buns
* Divide the dough into 8 equal pieces.
* Shape each piece into a smooth ball.
* Arrange on a parchment lined baking sheet, leaving space between each bun.
5. Second Rise
* Cover loosely and let rise for 30 minutes until puffy.
6. Add Topping
* Preheat the oven to 375°F (190°C).
* Mix the beaten egg with the milk.
* Brush the tops of the buns with the egg wash.
* Sprinkle generously with sesame seeds.
7. Bake
* Bake for 13 to 15 minutes until deeply golden brown and shiny.
* Remove from the oven and cool on a wire rack.
Tips
* For extra soft buns, brush them lightly with melted butter while still warm.
* Weigh the dough portions to keep all buns the same size.
* These buns freeze well for up to 2 months.
