WEIGHT WATCHERS BAKED CHEESY MEXICAN CHICKEN & JICAMA CASSEROLE

Craving the bold, sizzling, cheese-smothered decadence of Mexican Enchiladas and Chicken Bakes without high-carb tortilla crashes, starchy rice fillers, greasy sour cream tubs, and blown daily point budgets? 🙌 This Baked Cheesy Mexican Chicken & Jicama Casserole brings all that cantina magic straight to your dinner table in a clean rectangular glass baking dish—serving up a massive 38g of clean protein per slice for barely any points!

Our culinary secret weapon? Jicama! This crisp, prebiotic-rich, 0-point root vegetable bakes to a tender-firm, potato-like perfection while absorbing every ounce of savory taco seasoning and roasted pepper juices—without turning mushy or watery! We layer it with juicy shredded 0-point chicken breasts, blistered rainbow bell peppers, and sweet caramelized leeks. Bound together by a velvety, high-protein lime crema whipped from protein-packed low-fat cottage cheese, plain non-fat Greek yogurt, and fresh lime juice—no heavy sour cream or butter roux needed! Blanket-topped with an irresistible melted reduced-fat Pepper Jack and Sharp Cheddar cheese crust that broils to bubbly, golden-brown perfection! Pure fiesta comfort food made lean, high-protein, and completely guilt-free in ONE dish! 🕒✨

Ingredients:

2 lbs Boneless Skinless Chicken Breasts (cooked and shredded into juicy strands)

2 Medium Fresh Jicama Bulbs (peeled and sliced into 1/4-inch thin round medallions)

2 Large Bell Peppers (1 red, 1 yellow; cored and sliced into strips)

1 Large Leek or Sweet Yellow Onion (white part only, washed thoroughly and sliced thin)

6 cloves Garlic (minced)

1.5 cups Low-Fat 1% Cottage Cheese (smooth protein cream base)

1/2 cup Plain Non-Fat Greek Yogurt (room temperature)

1/4 cup Low-Sodium Chicken Bone Broth

Juice of 2 Large Fresh Limes (divided)

2 tbsp Ancho Chili Powder or Taco Seasoning

1 tbsp Ground Cumin (toasted)

1 tsp Smoked Paprika & Garlic Powder

1/2 tsp Onion Powder & Dried Mexican Oregano

1 tbsp Nutritional Yeast (enhances natural savory cheese depth)

1 cup Reduced-Fat Pepper Jack Cheese (finely shredded from a block)

1/2 cup Reduced-Fat Sharp Cheddar Cheese (finely shredded from a block)

1/4 cup Fresh Cilantro (chopped, for garnish)

2 Green Scallions (thinly sliced, for garnish)

1 Fresh Jalapeño (thinly sliced, for garnish)

Olive oil cooking spray

Coarse sea salt & freshly cracked black pepper to taste

Instructions:

Prep the jicama: Peel the brown skin off the jicama bulbs and slice into 1/4-inch thick rounds. Blanch the rounds in a pot of boiling salted water for 5 minutes, drain thoroughly, and pat completely dry with paper towels (this ensures a tender, scalloped-potato texture that bakes without releasing excess water).

Preheat your oven to 385°F (195°C). Lightly mist a 9x13-inch rectangular clear glass Pyrex baking dish with olive oil spray.

Sauté chicken and aromatics: Mist a large skillet with olive oil spray over medium-high heat. Add the sliced bell peppers, sliced leek, and minced garlic. Sauté for 3 minutes until tender and lightly charred. Stir in the shredded chicken breast, ancho chili powder, cumin, smoked paprika, garlic powder, onion powder, oregano, sea salt, black pepper, and the juice of 1 lime. Cook for 2 minutes to meld flavors, then remove from heat.

Make the protein lime crema: In a blender or food processor, combine the low-fat cottage cheese, plain non-fat Greek yogurt, chicken bone broth, nutritional yeast, and the juice of the remaining lime. Blend on high for 45–60 seconds until completely silky smooth and creamy.

Assemble the casserole: Layer half of the blanched jicama medallions across the bottom of the glass baking dish. Spread the seasoned shredded chicken and pepper mixture evenly over top. Pour the velvety lime crema across the chicken layer, smoothing gently with a spatula. Top with the remaining jicama medallions.

Bake uncovered at 385°F (195°C) for 22–25 minutes until bubbling hot at the edges and the jicama is fork-tender.

Carefully remove the glass dish (using oven mitts) and scatter the shredded reduced-fat Pepper Jack and Cheddar cheeses evenly across the entire surface.

Switch the oven to BROIL (high) and return the dish to the upper rack for 3–4 minutes until the cheese is completely melted, bubbly, and mottled with golden-brown blisters.

Garnish generously with freshly chopped cilantro, sliced scallions, fresh jalapeño wheels, and coarse cracked black pepper.

Use a wide stainless steel serving spatula to slice and lift a steaming, cheesy square portion onto a white ceramic dinner plate, and enjoy piping hot with a silver dinner fork! 🥗✨

Olive oil cooking spray

Coarse sea salt & freshly cracked black pepper to taste

Instructions:

Layer the slow cooker: Lightly mist the black ceramic insert of a 6-quart oval slow cooker with olive oil spray. Place the whole raw chicken breasts at the bottom.

Add aromatics and broth: Add the drained black beans, fire-roasted diced tomatoes, charred sweet corn, minced chipotle in adobo, sliced leek, and minced garlic over the chicken. Season with ancho chili powder, cumin, garlic powder, onion powder, Mexican oregano, smoked paprika, nutritional yeast, sea salt, and black pepper. Pour the low-sodium chicken bone broth over top.

Slow-cook: Cover with the glass lid and cook on LOW for 5 hours (or on HIGH for 3 hours) until the chicken breasts are extraordinarily tender.

Shred the chicken: Transfer the cooked chicken breasts onto a clean wooden cutting board. Use two silver forks to shred the meat into thick, juicy strands. Return the shredded chicken directly back into the simmering broth.

Make the protein crema: In a small bowl, whisk together the plain non-fat Greek yogurt, blended cottage cheese, and fresh lime juice until smooth and creamy.

Temper and stir: Ladle 1/2 cup of the hot soup broth into the Greek yogurt crema, whisking gently to temper, then pour the mixture into the slow cooker. Stir well until the soup turns a velvety, rich reddish-orange color.

Melt the cheese: Scatter the shredded reduced-fat Pepper Jack cheese evenly across the top of the soup. Cover with the lid and let cook on LOW for 8–10 minutes until the cheese is completely melted and stretchy.

Use a deep stainless steel ladle to portion the steaming, cheesy soup into deep white ceramic bowls.

Garnish generously with freshly chopped cilantro, sliced scallions, and coarse cracked black pepper.

Carefully remove the glass dish (using oven mitts) and scatter the shredded part-skim Mozzarella and remaining grated Parmigiano-Reggiano cheeses evenly across the entire surface.

Switch the oven to BROIL (high) and return the dish to the upper rack for 3–4 minutes until the cheese is completely melted, bubbly, and mottled with golden-brown blisters.

Garnish generously with freshly chopped Italian flat-leaf parsley, fresh basil, and coarse cracked black pepper. Let rest for 5 minutes before slicing.

Weight Watchers slow cooker creamy chicken and corn chowder is high protein, ultra-creamy, and super low point.

Prep time: 15 mins

Cook time: 5–6 hours (Low) / 3–4 hours (High) (LOW keeps the chicken ultra-tender!)

Servings: 6 (Generous 1.5-cup servings)

WW Points: Approx. 2–3 Points per serving (depending on your personalized plan)

Ingredients:

The Chicken & Hearty Veggie Base:

1.5 lbs boneless, skinless chicken breasts (Zero Point protein!)

2 cups frozen or fresh sweet corn kernels (or 1 can 15 oz sweet corn, drained)

2 medium white turnips (or rutabaga), peeled and cut into ½-inch cubes (mimics the soft, starchy texture of potatoes with a fraction of the carbs/points!)

1.5 cups baby carrots, cut into bite-sized rounds

1 medium yellow onion, finely diced

2 stalks celery, finely chopped

4 cloves garlic, minced

4 cups low-sodium chicken bone broth (or vegetable broth)

1 tsp smoked paprika

1 tsp garlic powder

1 tsp onion powder

1 tsp dried thyme

Salt & freshly cracked black pepper, to taste

The Light Velvety Chowder Finish:

4 oz light cream cheese (Neufchâtel), softened and cubed (or ½ cup plain non-fat Greek yogurt stirred in off heat)

½ cup light cream (half-and-half or unsweetened almond/cashew milk)

2 tbsp cornstarch whisked with 3 tbsp cold chicken broth (slurry to thicken the chowder)

1.5 cups reduced-fat sharp cheddar cheese, shredded (divided: 1 cup stirred into the pot, ½ cup for topping)

4 green onions (scallions), thinly sliced

Optional Garnish:

2 slices cooked turkey bacon, crumbled

Extra cracked black pepper

Instructions:

Layer the Base: Place the whole raw chicken breasts at the bottom of your slow cooker.

Add the diced turnips, baby carrots, diced yellow onion, chopped celery, sweet corn, and minced garlic around and over the chicken.

Pour in the 4 cups of low-sodium chicken broth.

Sprinkle smoked paprika, garlic powder, onion powder, dried thyme, 1 tsp salt, and freshly cracked black pepper evenly over the ingredients. Stir gently to combine the vegetables.

Cover tightly with the lid and cook on LOW for 5–6 hours (or HIGH for 3–4 hours) until the chicken breasts reach an internal temperature of 165°F and the turnips and carrots are fork-tender.

Shred the Chicken: Remove the chicken breasts to a cutting board and shred into bite-sized succulent pieces using two forks. Return the shredded chicken to the slow cooker.

Thicken & Emulsify: Whisk the cornstarch slurry directly into the bubbling soup. Dot the surface with the softened light cream cheese cubes and pour in the ½ cup of light cream.

Use an immersion blender to pulse 2–3 times directly in the pot (or mash a few turnip cubes with a potato masher) to release natural body into the broth while leaving plenty of chunky chicken, corn, and veggies intact.

Stir in 1 cup of the reduced-fat shredded sharp cheddar cheese until fully melted and glossy.

Cover and cook on LOW for an additional 15 minutes to allow the chowder to thicken into a rich, velvety consistency.

Taste and adjust seasoning with extra salt or black pepper as needed.

Serving: Ladle steaming hot chowder into rustic shallow bowls. Crown each bowl with a sprinkle of remaining cheddar cheese, sliced green onions, and freshly cracked black pepper. Serve warm!
