Roasted Sweet Potato Bites with Goat Cheese, Walnuts & Cranberries
Ingredients
2 large sweet potatoes, sliced into 1-inch rounds
4 oz (115 g) goat cheese, sliced
1/3 cup dried cranberries
1/3 cup walnuts, roughly chopped
2 tablespoons honey
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Step 1
Preheat the oven to 400°F (200°C). Line a baking tray with parchment paper.
Step 2
Arrange the sweet potato slices on the tray. Brush both sides with olive oil and season with salt and black pepper.
Step 3
Bake for 20–25 minutes, turning halfway through, until the sweet potatoes are tender and lightly caramelized.
Step 4
Remove from the oven and place a slice of goat cheese on top of each sweet potato round.
Step 5
Return to the oven for 3–5 minutes, just until the cheese softens.
Step 6
Transfer to a serving platter. Top each piece with dried cranberries and chopped walnuts.
Step 7
Drizzle honey over the tops and serve warm.
