Tiramisu Sandwich Cookies πͺβοΈ
Ingredients:
- 1 cup unsalted butter, softened π§

Directions:
Start by preheating your oven to 350Β°F (175Β°C) and lining a baking sheet with parchment paper. In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until well combined. In another bowl, whisk together the flour, baking powder, salt, and espresso powder. Gradually add the dry ingredients to the wet ingredients, mixing until you form a soft dough. Roll the dough into 1-inch balls and place them on the prepared baking sheet, spacing them about 2 inches apart. Gently flatten each ball with your palm. Bake for 10-12 minutes or until the edges are lightly golden. Allow the cookies to cool completely on a wire rack. For the filling, beat together the mascarpone cheese, powdered sugar, and coffee liqueur until smooth and creamy. Once the cookies are cool, spread a generous dollop of the mascarpone filling on the flat side of one cookie and top it with another to create a sandwich. Lightly dust the tops of the cookies with cocoa powder before serving.
