📝 Ingredients
For the Soup
• 2 tablespoons olive oil
• 1 small onion, diced
• 1 small red bell pepper, diced
• 2 garlic cloves, minced
• 1 teaspoon ground cumin
• 1 teaspoon chili powder
• ½ teaspoon smoked paprika
• ½ teaspoon dried oregano
• 4 cups chicken broth
• 1 (10 oz) can red enchilada sauce
• 1 (14.5 oz) can fire-roasted diced tomatoes
• 1 (4 oz) can diced green chiles
• 1 (15 oz) can black beans, drained and rinsed
• 1½ cups frozen or canned corn, drained
• 2 cups cooked shredded chicken
• 4 oz cream cheese, softened and cubed
• 1 cup heavy cream or half-and-half
• 1½ cups shredded cheddar or Mexican-blend cheese
• Salt and black pepper, to taste
Optional Toppings
• Fresh cilantro
• Sliced avocado
• Sour cream
• Tortilla strips or crushed tortilla chips
• Lime wedges
• Sliced jalapeños
👩🍳 Method
1. Heat olive oil in a large pot over medium heat. Add the onion and red bell pepper and cook for 3–4 minutes until softened.
2. Stir in the garlic, cumin, chili powder, smoked paprika, and oregano. Cook for about 30 seconds until fragrant.
3. Pour in the chicken broth, red enchilada sauce, fire-roasted tomatoes, and green chiles. Stir and bring to a gentle simmer.
4. Add the black beans, corn, and shredded chicken. Simmer for about 10 minutes to let the flavors blend.
5. Reduce the heat to LOW. Add the softened cream cheese and heavy cream, stirring until the cream cheese melts and the broth becomes smooth.
6. Gradually stir in the shredded cheddar or Mexican-blend cheese until fully melted.
7. Taste and season with salt and black pepper as needed.
8. Ladle into bowls and finish with your favorite toppings. Serve hot!
💡 Kitchen Tip
Keep the heat low after adding the cream cheese and shredded cheese. Boiling the soup at this stage can cause the dairy to separate instead of creating that beautifully creamy broth.
